Mashed Potato Soup
Although I live in a hot climate the winters do get cold enough to enjoy a nice creamy bowl of mashed potato soup. This recipe is stacked full of creamy mashed potatoes, chicken, corn, onions, bacon and cheddar cheese.
Every bite will be creamy and delicious and don’t forget to serve it with a fresh sliced baguette for dipping, and a large spoon! If you don’t have leftover mashed potatoes for the soup don’t panic, you can use the store bought mashed potatoes which is exactly what I did to make this quick and easy.
Ingredients you will need for mashed potato soup:
- 24 oz container refrigerated mashed potatoes (or 3 cups homemade mashed potatoes)
- 2 cups chicken broth
- 1 can sweet corn
- 2 cups rotisserie chicken
- 1/2 cup chopped onion
- 2 tbsp butter
- 3/4 cup whole milk
- 5 pieces of bacon, cooked and crumbled
- 2 tbsp chopped chives ( extra for topping-optional)
- shredded cheddar cheese
- 1 tbsp reserved bacon grease
- salt/pepper to taste
How to make potato soup from mashed potatoes:
In a large frying pan cook bacon until crisp then add in the chopped chives and mix to combine. Drain the bacon grease reserving 1 tablespoon for soup and place on a plate lined with a paper towel and set aside.
Next, in a large pot over medium high heat add butter and allow to melt. Pour in chopped onion and cook until just tender, about 2-3 minutes. Add in chicken broth, corn (drained), reserved bacon grease, and chicken. Bring to a boil then reduce heat and simmer.
Add in milk and mashed potatoes and stir until combined. Continue to simmer until heated through, season with salt and pepper to taste. Top with cooked bacon/chive mixture, and shredded cheese. Serve and enjoy.
This soup is so easy and quick to make you will want mashed potatoes all the time just so you can make this mashed potato soup recipe.
Can you add instant mashed potatoes to soup?
Yes.
I use instant mashed potatoes in this recipe.
It makes it so much easier, however if you want to make your own mashed potatoes you absolutely can.
Either way, the soup will come out creamy and delicious.
How long will potato soup last in the fridge?
Make sure to allow the soup to cool and then place it in an airtight container. It needs to be stored in the fridge and can last up to 3-4 days.
This mashed potato soup is perfect around the Holidays when you have all those leftovers. You could even add your left over turkey and stuffing to it.
So wether you make it with homemade mashed potatoes or store bought refrigerated mashed potatoes, the result will be sensational.
