Listen, here is the thing, I love sweet potatoes and I love the subtle sweetness they have all on their own so this roasted sweet potato recipe has just the right amount of sweet and spicy that will make your mouth water.

With just a touch of brown sugar and honey, along with some chipotle pepper and chili paste these roasted sweet potato cubes come out sweet and spicy with just the right amount of crispy texture on the outside to melt in your mouth.

How do you cut sweet potatoes into chunks?

This is a very easy process and sometimes you can find them already cut into cubes at your local grocery store in a bag where the bagged salad and lettuce is located.

First wash and peel your sweet potatoes.

Second, cut the sweet potato in half and then cut each half into 1/2 inch slices.

Third, turn the slices to lay flat and cut the slices in half and then cut each half into cubes.

  • 3 cups sweet potatoes, peeled and cubed
  • 3 tbsp avocado or MCT oil, divided
  • 1 tsp chipotle pepper
  • 1 tsp garlic salt
  • 1 tsp chili paste
  • 1 tsp ground black pepper
  • 1 tsp paprika
  • 1 tbsp brown sugar
  • 1 tbsp honey
  • 1 tbsp cilantro, chopped for garnish

How to roast sweet potatoes in the oven

  1. Preheat oven to 425 degrees and place 1 tbsp oil in a 12 inch skillet and massage the oil into the bottom and along the sides of the skillet and set aside.
  2. In a large bowl add sweet potatoes, remaining oil, and the remaining spices and mix until sweet potatoes are evenly coated. sweet potatoes cut into cubes in a glass mixing bowl with oil and spices added and mixed by The Food Cafe.
