How to Cut Sweet Potatoes into Chunks
Cutting sweet potatoes into cubes is easier than it looks (and you can even find pre-cut ones in the produce section near the bagged salads if you’re short on time).

Wash and peel the sweet potatoes.

Cut them in half lengthwise, then slice into ½-inch thick slabs.

Lay the slices flat and cut into cubes.
Pro tip: Try to keep your cubes the same size so they roast evenly and get that golden, crisp edge.
Ingredients for Oven Roasted Sweet Potatoes

3 cups sweet potatoes, peeled and cubed

3 tbsp avocado or MCT oil, divided

1 tsp chipotle pepper

1 tsp garlic salt

1 tsp chili paste

1 tsp ground black pepper

1 tsp paprika

1 tbsp brown sugar

1 tbsp honey

1 tbsp cilantro, chopped (for garnish)

How to roast sweet potatoes in the oven
- Preheat oven to 425 degrees and place 1 tbsp oil in a 12 inch skillet and massage the oil into the bottom and along the sides of the skillet and set aside.
- In a large bowl add sweet potatoes, remaining oil, and the remaining spices and mix until sweet potatoes are evenly coated.

- Pour coated sweet potatoes into prepared skillet and bake for 15 minutes. Gently stir potatoes and cook for an additional 20 minutes. Garnish with chopped cilantro and serve.
