I may live where it’s sunny most of the year, but when the weather dips, this soup is the first thing I crave. It’s creamy, hearty, and ready in about 20 minutes.

Mashed Potato Soup
The beauty of this soup is in its simplicity. It’s creamy and rich without being heavy, made with tender chunks of chicken, corn, bacon, cheddar, and a big scoop of mashed potatoes—homemade or store-bought.
If you have leftover mashed potatoes, this is the best way to use them. But don’t worry—if you don’t, those refrigerated store-bought mashed potatoes work perfectly (and that’s exactly what I used!).
Every bite is creamy, cheesy, and loaded with cozy flavor. Serve it with a warm baguette for dipping, a sprinkle of chives, and a big spoon.

Ingredients You’ll Need

24 oz refrigerated mashed potatoes (or 3 cups homemade)

2 cups chicken broth

1 can sweet corn, drained

2 cups shredded rotisserie chicken

½ cup chopped onion
-
2 tbsp butter
-
¾ cup whole milk
-
5 slices bacon, cooked and crumbled
-
1 tbsp reserved bacon grease
-
2 tbsp chopped chives (plus extra for topping)

Shredded cheddar cheese, for topping

Salt and pepper, to taste

How to make potato soup from mashed potatoes:
In a large frying pan cook bacon until crisp then add in the chopped chives and mix to combine. Drain the bacon grease reserving 1 tablespoon for soup and place on a plate lined with a paper towel and set aside. ![]()
Next, in a large pot over medium high heat add butter and allow to melt. Pour in chopped onion and cook until just tender, about 2-3 minutes. Add in chicken broth, corn (drained), reserved bacon grease, and chicken. Bring to a boil then reduce heat and simmer. ![]()
Add in milk and mashed potatoes and stir until combined. Continue to simmer until heated through, season with salt and pepper to taste. Top with cooked bacon/chive mixture, and shredded cheese. Serve and enjoy. ![]()

Can You Add Instant Mashed Potatoes to Soup?
Yes! Instant mashed potatoes work great here. They thicken the soup beautifully and save time. But if you prefer homemade, that works just as well. Either way, you’ll get a perfectly creamy result.
How Long Does Mashed Potato Soup Last in the Fridge?
Allow the soup to cool before transferring it to an airtight container. It will keep in the refrigerator for 3–4 days. When reheating, add a splash of milk or broth to loosen it back up.
