Mashed Potato Soup

Mashed potato soup is bursting with flavor, full of creamy goodness, topped with bacon and cheese and is perfect for cold winter nights and fun football weekends.

I love to make soup, and this creamy sausage and potato soup, cheesy ham and potato soup, and stuffed pepper soup are all flavorful and delicious your family will love.

Mashed Potato Soup

Although I live in a hot climate the winters do get cold enough to enjoy a nice creamy bowl of mashed potato soup.  This recipe is stacked full of creamy mashed potatoes, chicken, corn, onions, bacon and cheddar cheese.

Every bite will be creamy and delicious and don’t forget to serve it with a fresh sliced baguette for dipping, and a large spoon!  If you don’t have leftover mashed potatoes for the soup don’t panic, you can use the store bought mashed potatoes which is exactly what I did to make this quick and easy.

 Ingredients you will need for mashed potato soup:

  • 24 oz container refrigerated mashed potatoes (or 3 cups homemade mashed potatoes)
  • 2 cups chicken broth
  • 1 can sweet corn
  • 2 cups rotisserie chicken
  • 1/2 cup chopped onion
  • 2 tbsp butter
  • 3/4 cup whole milk
  • 5 pieces of bacon, cooked and crumbled
  • 2 tbsp chopped chives ( extra for topping-optional)
  • shredded cheddar cheese
  • 1 tbsp reserved bacon grease
  • salt/pepper to taste

How to make potato soup from mashed potatoes:

In a large frying pan cook bacon until crisp then add in the chopped chives and mix to combine.  Drain the bacon grease reserving 1 tablespoon for soup and place on a plate lined with a paper towel and set aside. Two images showing the first step in making mashed potato soup, cooking the bacon and chives in a frying pan by The Food Cafe.

Next, in a large pot over medium high heat add butter and allow to melt.  Pour in chopped onion and cook until just tender, about 2-3 minutes.  Add in chicken broth, corn (drained), reserved bacon grease, and chicken.  Bring to a boil then reduce heat and simmer. Second step making mashed potato soup saute the onions in butter in a large pot and add in chicken, corn, bacon grease, and chicken broth, by The Food Cafe

This soup is so easy and quick to make you will want mashed potatoes all the time just so you can make this mashed potato soup recipe.

How long will potato soup last in the fridge?

Make sure to allow the soup to cool and then place it in an airtight container.  It needs to be stored in the fridge and can last up to 3-4 days.
