Creamy Lemon Garlic Chicken Piccata

This Chicken Piccata is truly the dream team of flavors.  It’s rich and creamy sauce is to heavy and overpowering and will taste amazing over pasta, rice or mashed potatoes.  So I am a huge fan of simplicity and quickness.  I don’t like spending all day and night in the kitchen and when I can make a recipe that is as delicious and this Creamy Lemon Garlic Chicken Piccata in 30 minutes, well sign me up.

What does chicken piccata mean in English?

  • Piccata in reference to food and food preparation, means meat or fish that is sliced, sautéed, and served in a sauce made of  butter, lemon, and additional spices.

How do you make Piccata sauce?

  • Piccata sauce is perfect for meat or fish.  I like it paired with chicken, but it would be great with pork chops, halibut, or trout.
  • To make a piccata sauce it is quite simple.
  • Add 1 Tablespoon safflower oil to a heavy skillet.
  • Saute, thinly sliced shallots and garlic for about 1 minute.
  • Add lemon juice and white wine, cooking for about 5 more minutes until sauce has thickened slightly.
  • Finally add in butter and capers and server over your meat or fish of choice.

What kind of wine do you use for chicken piccata?

  • There are a lot of different wines you could use for this chicken piccata recipe.  Some more expensive than other will different flavors to them.
  • I use regular white cooking wine.  I believe it is down the isle in the grocery store where the balsamic vinegar is.  I love the flavor it adds, plus it is not expensive.  You can pay anywhere form $6 upward to, or beyond $23 for wine, so it is up to you what type you would like to use.

What is a good side dish for chicken piccata?

There are many great side dishes to choose from when making chicken piccata: Here are a few of my favorites.

  • A thin type of pasta noodle.  I used linguine noodles with mine.
  • White rice or rice pilaf.
  • Mashed potatoes, roasted red potatoes or a baked potato.
  • Roasted vegetables or steamed vegetables.
  • Creamed spinach or corn.
  • Warm sough dough rolls or sliced french bread.
  • A simple garden salad.

Creamy Lemon Garlic Chicken Piccata

Ingredients:

  • 4 thin sliced chicken breast
  • 1/4 cup flour
  • 1/4 cup corn starch
  • 2 teaspoons baking soda
  • 2 teaspoons garlic salt
  • 2 teaspoons fresh ground pepper
  • 3 Tablespoons safflower oil
  • 1 cup white cooking wine
  • 1 shallot thinly sliced
  • 1 teaspoon minced garlic
  • 3 Tablespoons lemon juice
  • 3 Tablespoons unsalted butter
  • 2 Tablespoons capers
  • lemon wedges, fresh dill, and parsley to garnish

Directions:

  1. In a large ziplock bag add flour, cornstarch, baking soda, garlic salt, and pepper.
  2. Place chicken in bag and shake to thoroughly coat.  In a large skillet or sauce pan, add 2 Tablespoons safflower oil and cook chicken 6-8 minutes, until golden brown on both sides.  (you may need to cook 2 chicken breast at a time).
  3. Remove chicken from skillet and set aside.  Cover chicken with foil to keep warm.
  4. In the same skillet heat 1 Tablespoon safflower oil, add shallots and garlic and sautee about 1 minute.  Add in lemon juice and white wine. Cook for 5 minutes until slightly thickened.
  5. Add butter and capers and mix until butter is melted.  Place chicken back in skillet and garnish with lemon wedges, dill and parsley.
