If there is one thing I love about Fall and Winter is making easy and delicious homemade soup.  This Italian sausage tortellini soup will be a perfect way to warm up your family as the seasons change.  Packed full of ground sausage, cheesy tender tortellini, and robust tomatoes all nestled in a creamy broth and is made in under 30 minutes.  So if you are short on time, which seems to be the on going scenario in my life and possibly yours, you need to have sausage tortellini soup in your quick fix recipe arsenal.

How do you make sausage tortellini soup?

  1. Cook cheese tortellini according to package directions and set aside.  In a large sauce pan cook sausage and onions until sausage is no longer pink. Step on making sausage tortellini soup.   2. Pour in diced tomatoes, chicken stock, and cream cheese.  Bring to a boil and stir until cream cheese has melted. Add in cooked tortellini and stir to combine and heated through.  Sprinkle with fresh grated parmesan cheese. A white sauce pan filled with ground sausage, diced tomatoes, diced onions, and cream cheese chopped into cubes. Being able to have creamy and delicious soup recipes that can be made with 6 simple ingredients in under 30 minutes is what I call a “win.”  My family gets a hearty soup that can be served with warm sliced french bread or a simple green salad and I don’t have to spend the majority of my night in the kitchen.  Not to mention there is very little clean up making life that much easier.

How do you make spinach tortellini soup?

If you want to add some spinach to your Italian sausage tortellini soup it is nearly an effortless step.  Simply add it to the soup at the same time you add the cheese tortellini back in and stir until the soup is heated through and the spinach has wilted, and this creamy tortellini and spinach soup recipe is the perfect soup if you want to add the spinach and hold the sausage.

Can you freeze sausage tortellini soup?

Yes, but there is a catch.  In order to freeze the soup you cannot add the tortellini in with it.  So what you do is make the soup,(leaving the tortellini out and uncooked) allow it to cool completely and place it in an airtight container or ziplock bag, making sure all the air is out.

When you are ready to eat the soup, simply unthaw the container or ziplock bag in the refrigerator.   Place the soup in a saucepan over medium high heat and let simmer. Cook refrigerated tortellini according to package directions and add to soup, stirring to combine.

Soup recipes make great freezer meals that can be taken out the night before to thaw so they are ready to go the next day so all you have to do is heat them up.

  • 1 20 oz package cheese tortellini cooked according to package directions
  • 1 lb ground sausage
  • 1 cup onions diced
  • 1 14.5 oz can seasoned diced tomatoes drained
  • 1 8 oz package cream cheese cut into cubes
  • 3 cups chicken stock
