The summer is in full swing and the temperatures are blazing hot, so one of my favorite recipes to whip up to keep us cool and refreshed is this delicious sugar cookie fruit pizza.
Loaded with some of the sweetest fresh strawberries, blackberries, raspberries, and blueberries and we can’t forget those amazing golden kiwis that are mouth watering.
And how can you resist a giant sugar cookie crust and whipped vanilla pudding “sauce.” This is one Summer treat that is irresistible and super easy to make.
How do you make sugar cookie crust?

- In a medium bowl sift together flour, baking soda, salt and set aside. Preheat oven to 400 degrees.
- Using a large bowl cream together butter, sugar, vanilla, and one egg (unbeaten).
- Add the dry ingredients and 1/2 cup sour cream to the creamed ingredients and mix until incorporated.
- Form the sugar cookie dough into a ball and roll out on a lightly floured surface. Place in the bottom of a round cookie sheet or rimmed baking sheet and pinch the edges to form a crust. Bake for 10-12 minutes, until golden brown. Allow to cool 10 minutes.
If you want to make this fruit pizza recipe with pre-made sugar cookie dough you can use Pillsbury sugar cookie dough or whatever sugar cookie dough you like.
- set the dough out to come to room temperature. This will make forming the dough into a ball easier and more pliable.
- roll it out on a floured surface and place on a large round cookie sheet or sheet pan and bake at 350 degrees for 14 minutes, or until golden brown.

How to make fruit pizza
- Make sugar cookie crust using one of the methods instructed above and set aside too cool, about 10 minutes.
- In a medium mixing bowl whisk together water and sweetened condensed milk. Add in instant vanilla pudding and mix for 2 minutes until set.
- Fold in whipped topping and place in the refrigerator for 10 minutes, then spread evenly over cooled sugar cookie crust.
- Layer fruit on top of whipped vanilla topping, slice and serve.
How far ahead can you make fruit pizza?
You can make the sugar cookie crust and the whipped vanilla pudding up the night before and slice the fruit (if necessary). Cover all tightly with plastic wrap and store the pudding and fruit in the refrigerator.
Just before you are ready to serve assemble the sugar cookie fruit pizza, or the other alternative is to make it all the night before and keep wrapped tightly in plastic wrap until ready to cut and serve.

- 16.5 oz pre-made cookie dough, or homemade dough
- 1 oz box instant fat free vanilla pudding
- 1-1/3 cups water
- 6 tbsp sweetened condensed milk
- 8 oz cool whip, thawed
- 1 pint strawberries, sliced
- 1 pint blueberries
- 1 pint blackberries
- 1 pint raspberries
- 6 kiwis, sliced or cut with decorative cookie cutter
