When it comes to dinner made simple and you don’t have to think about it, this soup made in the crockpot will be perfect for all those busy days and cold Fall nights.

Loaded with hearty ingredients like ground sausage, onion, chopped peppers, diced tomatoes, and rice, preparation is a snap and cooking is thoughtless.

How to make stuffed pepper soup

Crockpots are one of my favorite things to make dinner with.  They take all the time spent in the kitchen cooking and make a magically delicious meal from start to finish with very little effort.

What are the ingredients for stuffed pepper soup?

  • ground sausage
  • red and green peppers, seeded and chopped
  • diced onion
  • tomato sauce with garlic, oregano, and basil
  • Italian-style diced tomatoes
  • cooked white rice
  • dried oregano
  • dried basil
  • fresh basil

Is ground pork the same as sausage?

The difference between ground pork and sausage is simply, ground sausage is pork that has been seasoned and ground pork is just pork, no seasoning.

Can you substitute ground sausage with other meat?

Yes, you can use lean ground beef, ground turkey, ground chicken, ground venison or elk.

Can you freeze stuffed pepper soup?

Yes.  Simply let the soup cool after you have made it and store in a large container that seals or into gallon sized ziplock bags.  Label and date and place in your freezer.  Soup will last up to 2-3 months.

Can you make stuffed pepper soup on the stove top?

Yes.  Brown the ground sausage and add in diced onion, chopped peppers, tomato sauce, diced tomatoes, cooked rice, dried basil and oregano and mix to combine.  Let simmer uncovered for 25-30 minutes until peppers are tender and serve.

Ingredients

  • 1 LB ground sausage
  • ½ white onion diced
  • 2 cups chopped peppers red and green
  • 2-8 oz cans tomato sauce with basil garlic, and oregano
  • 1-14.5 oz can Italian-style diced tomatoes
  • 3 cups vegetable broth
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1 cup cooked rice white or brown or both

Instructions

  • In a large skillet add ground sausage and diced onion and cook until no longer pink. Drain any fat and transfer to crockpot.
  • Add in chopped peppers, tomato sauce, diced tomatoes, vegetable broth, dried basil and oregano, and cooked rice. Stir everything together, cover and cook on low for 6 hours. Garnish with fresh chopped basil.
