The Best Stuffed Pepper Soup (Made Easy!)
When the evenings get chilly and your schedule gets busy, the crockpot becomes your best friend. This Stuffed Pepper Soup is one of those recipes that practically makes itself — hearty, flavorful, and full of everything you love about classic stuffed peppers, but in cozy soup form.
Each spoonful has a little bit of everything: tender peppers, savory sausage, fluffy rice, and a rich tomato base that tastes like it simmered all day (because it did 😉).
Dinner doesn’t get much easier — or more delicious!
How to make stuffed pepper soup
- In a large skillet add ground sausage and diced onion and cook until no longer pink. Drain any fat and transfer to crockpot.

- Add in chopped peppers, tomato sauce, diced tomatoes, vegetable broth, dried basil and oregano, and cooked rice. Stir everything together, cover and cook on low for 6 hours.

Freezer Friendly Meal
Stuffed Pepper Soup freezes beautifully. Let it cool completely, then transfer to airtight containers or labeled freezer bags. Freeze for up to 3 months. To serve, thaw overnight in the fridge and reheat on the stove or in the crockpot until hot.
Can You Make It on the Stove?
Yes!
Brown the sausage and onions, then add in chopped peppers, tomato sauce, diced tomatoes, rice, and seasonings. Simmer uncovered for 25–30 minutes, until the peppers are tender and the soup thickens.
