Garlic Butter Potatoes and Sausage Skillet is one of those sides that can be served at breakfast, lunch, and dinner.  They go great as a side to a big family breakfast with eggs made any style, or as a hearty lunch while outside camping, and perfect for a side to dinner with pork chops, steak or even just on their own.  This Potato and Sausage Skillet is packed full of flavor and will fill up even the hungriest of appetites.

With all the bold flavors and richness of this skillet I am a little on the fence wether to call it a true side dish, but regardless of how you want to serve it, you, your family, and friends will love it.  I first had Garlic Butter Potatoes and Sausage when I was growing up and went to camp.  We cooked it outside over the campfire and the smell alone had my mouth watering.  Not only is it easy to make, but the potatoes and sausage taste so good together it truly is the perfect combination.

Is smoked pork sausage already cooked?

For this recipe I use andouille sausage which is fully cooked and can be eaten cold.  However I chose to cook them to give them a crispy outside and warm juicy inside.

Can you cook potatoes in a frying pan?

Yes.  Simply add 2-3 tablespoons of butter to the frying pan over medium heat and let it melt.  Add in diced potatoes turning often, and cook 8-10 minutes until potatoes have browned and become tender.

How do you make Garlic Butter Potatoes and Sausage Skillet?

  1. Begin by slicing the sausage and potatoes and set aside.
  2. In a large skillet heat 1 tablespoon of butter until melted and add the sliced sausage, sauté until sausage has browned on both sides, about 5-6 minutes.  Remove from skillet and set aside.
  3. In the same skillet add 2 tablespoons of butter and 2 tablespoons of minced garlic over medium heat.  Add the potatoes to the skillet and season with garlic salt, cayenne pepper, seasoning salt, onion powder, and black pepper. Begin cooking making sure to turn often.  Cook until potatoes are lightly browned and tender about 8-10 minutes.  The last few minutes add in sliced onions and sauté in with the potatoes.
  4. Once potatoes and onions have finished cooking add the sausage back to the skillet and cook about 2 more minutes to heat the sausage.  Garnish with chopped parsley and serve.

Ingredients:

  • 1 8oz bag petite red potatoes, quartered
  • 1 8oz bag petite gold potatoes, quartered
  • 2 14oz packages of Andouille smoked sausage, diced
  • 1 onion, thinly sliced
  • 3 tbsp butter, divided
  • 2 tbsp minced garlic
  • 1/2 tsp garlic salt
  • 1 tsp cayenne pepper
  • 1/2 tsp onion powder
  • 1/2 tsp seasoning salt
  • 1/2 tsp black pepper
  • chopped parsley for garnish (optional)

Directions:

  1. In a large skillet heat 1 tablespoon of butter until melted and add the sliced sausage, sauté until sausage has browned on both sides, about 5-6 minutes.  Remove from skillet and set aside.
