Teriyaki Meatball Stir Fry

No better way to start off your night than by making this very quick and easy Teriyaki Meatball Stir Fry.  Stir fry is so fun to make because you can put so much into it to make it delicious and customize it to your liking.  I love this stir fry recipe because it is made with these delicate thin rice noodles that absorb so much flavor, every bite is perfect.

The teriyaki sauce mixed with the honey is the perfect touch to bring all the flavors together while the addition of the red pepper flakes, garlic, and ginger gives it just enough flare to counter out the sweet.  It all just works.

What do you put in Stir Fry?

  • One of the great things about stir fry is the amount of different things that can be added.  Here are a few:
  • chicken
  • beef
  • pork
  • broccoli
  • carrots
  • bell peppers: red, yellow, or green
  • onions: yellow or red
  • pea pods, peas
  • water chestnuts

Weeknights get a little crazy for a lot of us so why not make things easy on ourselves?  That is why this Teriyaki Meatball Stir Fry is the perfect meal that won’t take all night to make.  If you family are not big fans of meatballs then throw in chicken or ground beef, it will even taste great if you go full vegetarian.  I promise the flavors will carry the meal no matter what type of meat you add or don’t add.

How do you do a stir fry?

  1. Soak the rice noodles in hot water for 5 minutes, until soft, then drain.
  2. In a wok or skillet heat peanut oil on medium high heat and cook thawed meatballs until golden brown.
  3. Remove the meatballs and put into a large bowl and toss with teriyaki sauce and honey until coated.  Set aside and cover to keep warm.
  4. Add remaining peanut oil to wok/skillet and add vegetables, garlic, and ginger.  Cook about 4 minutes until tender.
  5. Add the noodles and meatballs to the vegetables and mix to combine well.  Cook for 5 minutes until heated through and garnish with sliced green onion, sesame seeds, and red pepper flakes.  Serve.

Are rice noodles gluten free and healthy?

  • Rice is naturally gluten free, so using rice noodles in stir fry is a great way to substitute noodles that contain wheat.
  • They are a thin noodle with a chewy texture.

Ingredients:

  • 2 Tablespoons peanut oil
  • 1-18oz bag frozen beef meatballs, thawed.
  • 1-11oz box rice noodles, soaked in hot water for 5 minutes, until soft and drained
  • 1-8oz container of sliced mushrooms
  • 1/2 cup Yoshida’s original teriyaki sauce
  • 3 Tablespoons honey
  • 1-16oz bag frozen stir fry vegetables, thawed
  • 1 teaspoon fresh grated ginger
  • 1 teaspoon mined garlic
  • sliced green onions, sesame seeds, and red pepper flakes to garnish (optional)

Directions:

  1. In a large skillet or wok heat 1 Tablespoon of oil over medium high heat.
  2. Add thawed meatballs and cook until golden brown, about 6 minutes.
  3. Transfer meatballs to a large bowl and pour teriyaki sauce and honey over and mix to coat.  Set aside and cover to keep warm.
  4. Add remaining peanut oil to skillet or wok and vegetables, garlic, and ginger.  Cook until tender.  About 4 minutes.
  5. Add the noodles and meatballs to the vegetables, mix to combine and cook 5 minutes until heated through.
  6. Garnish with sliced green onions, sesame seeds, and red pepper flakes and serve.
