Stuffed Jalapeno Poppers

These sausage stuffed jalapeños may be small but the are mighty and the perfect finger food for your next tailgating or family party.  Each bite hits you with an explosion of spicy sausage mixed with cream cheese, garlic, onions, and peppers and then generously topped with pepper jack cheese and a little sprinkle of panko crumbs, all while nestled into a warm roasted jalapeno pepper.  The taste is going to have you shouting even louder for you favorite team. 

It’s no secret that I am a sports fanatic and finger foods for tailgating or having family and friends over for a game, particularly in our family watching the University of Washington or the University of Alabama, is what we look forward to on the weekends.  These Jalapeno Poppers stuffed with sausage make a great game day finger food that requires a sheet and and plenty of avid fans to devour.

How spicy is a jalapeno?

  • A jalapeno has a more mild range to its potency, but still has a kick to it, and can be eaten raw or cooked.
  • By removing the seeds and the ribs of the jalapeno (or the insides) it will take away some of the heat the jalapeno gives off.

How do I roast jalapeños?

  • Preheat oven to 375 degrees.
  • Cut the jalapeños in half lengthwise (not widthwise) through the middle to give two halves.
  • Remove the seeds and ribs within the jalapeno with a spoon ( I find that the easiest way) and place skin side down on a rimmed baking sheet.  Roast for 10 minutes, rotating jalapeños halfway through to roast evenly on both sides.
  • Let cool, until you can handle them with your fingers with being too hot.

How do you make sausage stuffed jalapeno peppers?

  1. Preheat oven to 375 degrees.  Cut jalapeños in half lengthwise, remove seeds and place jalapeños on a rimmed baking sheet and roast for 10 minutes.  Remove and set aside to cool.
  2. In a large skillet cook sausage until browned and add in chopped onions, red pepper, and garlic.  Cook 4 more minutes, stirring to combine.
  3. Transfer to a large mixing bowl and let cool.  Add in cream cheese and parmesan cheese and mix.
  4. Fill each jalapeno with even amounts of sausage mixture and top with grated pepper jack cheese and Panko crumbs.  Turn oven to high broil and broil for 3 minutes until cheese is melted and bubbling.
  5. Top with hot sauce and serve.

Ingredients

  • 15 jalapenos sliced in half lengthwise and seeded
  • 1 lbs hot spicy Italian sausage
  • ½ cup onion diced
  • ½ cup red pepper diced
  • 2 tbsp garlic minced
  • 2 cups cream cheese
  • ¼ cup grated parmesan cheese
  • ½ cup grated pepper jack cheese
  • ¼ cup panko bread crumbs
  • Hot sauce and chives to garnish
