Sweet potato casserole with marshmallows and pecans has been a long standing side dish in my family over the Holidays. Sweet potatoes have such a decadent creamy texture and mixed with butter, half and half, pumpkin pie spice, and a touch of vanilla and brown sugar this savory sweet potato casserole is like Thanksgiving and Christmas all wrapped in to one.
My dad is not a huge fan of sweet potatoes, but knowing he loves diving into layers of this simple sweet potato casserole that is topped with gooey roasted marshmallows makes this recipe a huge victory. Kids will love this too, just watch their eyes light up when they see all those marshmallows.
How to make sweet potato casserole?
- Peel and dice sweet potatoes in cubes.
- Place sweet potatoes into a large pot and cover with water. Boil for 8 minutes or until sweet potatoes are tender, drain.
- Add butter, half and half, pumpkin pie spice, vanilla extract, and brown sugar to sweet potatoes and mash by hand or with electric mixer until smooth.
- Pour mashed sweet potatoes into a prepared 2-1/2 qt casserole dish that has been lightly sprayed with nonstick cooking spray.
- In a medium bowl mix together melted butter, brown sugar, flour, pumpkin pie spice, and chopped pecans. Place over the top of mashed sweet potatoes.
- Top with mini marshmallows.
- Bake for 25 minutes at 375 degrees.

Yes. Peel, boil, and drain sweet potatoes, add in butter, half and half, pumpkin pie spice, vanilla, and brown sugar. Mash until potatoes are smooth. Transfer to an oven safe casserole dish. Make topping for sweet potatoes and place over them in the dish. Cover with plastic wrap and then foil and place in the refrigerator until ready to cook. When ready to bake, top mini marshmallows and cook for 25 minutes.

- Peel potatoes and cut into cubes. Place in a large pot and cover with water. Boil for 8 minutes, until tender, drain, and mash.
- Preheat oven to 350 degrees, clean potatoes, poke with a fork several times and bake for about 90 minutes or until tender. Let cool, peel and then place in a large bowl and mash.
Can you freeze sweet potato casserole?
Yes, but it has to be done carefully. Do not add any of the spices, such as pumpkin spice mix, until you are ready to cook it at a later time. Mash the sweet potatoes and place in desired casserole dish and allow to completely cool. Cover tightly with plastic wrap and then place a lid on top to seal. Put in freezer until ready to use, at that time you can thaw and add in any spices, marshmallows and pecan toppings.
How to reheat sweet potato casserole?
It’s very easy to reheat your sweet potato casserole.
Simply preheat your oven to 350 degrees and keep your casserole covered with foil.
Once your oven is ready, place your casserole in the oven and bake for 20-25 minutes or until it’s warmed through.
You can also choose to plate some of your casserole on a microwave safe plate and reheat in your microwave for 5 minutes or until your liking.
