Teriyaki Chicken Kabobs

Every Summer I always look forward to big cookouts with family, friends and neighbors.  There is just something to be said for Summer and grilling.

Although I live in a state that you can grill outside all year long, the Summer just has that special vibe that make the grill master come out in all of us.  These Teriyaki Chicken Kabobs are right in tune with that Summer vibe and not disappoint you or your guests. 

I know making your own chicken kabobs requires a bit of your own time as compared to buying them already made at the local grocery store, but they are so worth it.  Sometimes the kabobs we buy the meat is so thick you have to literally grill them to the point where they get dried out.

So buying your own chicken and cutting them into more 1 inch pieces makes grilling faster and your chicken juicy and tender, and really it doesn’t take too much effort to make your own.  It is a fun way to get your kids involved and they can even create their own kabobs.

What are chicken kabobs?

Kabobs are small pieces of meat and/or vegetables threaded on a skewer.  In Turkey they are called kebobs and spelled with an “e” instead of an “a.”  They also only have meat on the kebab and don’t normally have any vegetables, although vegetables can be prepared the same way on a separate skewer.

How do you make chicken kabobs?

  1. Preheat grill to 450 degrees and spray with nonstick grilling spray.
  2. Using chicken breast, cut them up into 1 inch pieces and place in a large mixing bowl.
  3. Cut up your vegetables into 1 inch pieces and place them into the same mixing bowl.
  4. Season with garlic salt, pepper, and teriyaki sauce.  Marinate for 30 minutes (optional) you can grill right away and baste with teriyaki sauce too.
  5. Using wood or metal skewers begin by threading chicken, vegetables, chicken, vegetables, and ending with chicken.  Repeat until all meat and vegetables have been threaded.  NOTE: if you use wood skewers make sure to soak them in cold water for at least 30 minutes before using them to prevent them from disintegrating on the grill.
  6. Grill with the lid open (if using wood skewers) flipping to cook both sides evenly.  Baste with teriyaki sauce several times while grilling.
  7. Once cooked remove from grill and garnish with diced green onions and baste once more with teriyaki sauce.

There are many options to serve along side your chicken kabobs, here are a few ideas:

Can chicken kabobs be baked in the oven?

Yes.  If you don’t have a grill or are not comfortable with using a grill you can cook the chicken kabobs in the oven.

  • Set your oven to 450 degrees.
  • Make your chicken kabobs and place them on a rimmed baking sheet sprayed with nonstick cooking spray.
  • Bake on the center rack for 10 minutes, baste them (optional) and flip and cook an additional 15 minutes.  You may need to cook a little longer if your pieces of meat are larger.

Teriyaki Chicken Kabobs are a healthy and nutritious way to celebrate Summer.  Loaded with white meat chicken breast, vegetables, and grilled to perfection your Summer eats have just begun.

Ingredients:

  • 3-4 boneless, skinless chicken breast, cut into 1 inch pieces
  • 1 large green pepper, cut into 1 inch pieces
  • 1 large red onion, cut into 1 inch pieces
  • 1 zucchini, sliced
  • 1 10oz container of cherry tomatoes
  • 1 cup Teriyaki Sauce, divided
  • 1-1/2 tsp garlic salt
  • 1-1/2 tsp pepper
  • 1 green onion, thinly sliced for garnishing.
  • 5 wood or metal skewers (if using wood skewers, soak in cold water for at least 30 minutes before using).
  • Nonstick grill spray

Directions:

  1. Preheat grill to 450 degrees and spray with nonstick grill spray.
  2. Place cut chicken and all vegetables into a large mixing bowl and season with garlic salt, pepper, and 1/2 cup teriyaki sauce.  Optional: cover and marinate in the refrigerator for 30 minutes.
  3. Thread a piece of chicken, then green pepper, red onion, a whole tomato, and zucchini onto skewer repeat and then end with a piece of chicken.
  4. Place on grill and cook for 8 minutes or until nice grill marks have formed, flip the skewers and baste with additional teriyaki sauce and grill 8 more minutes until chicken is cooked.  If using wood skewers grill with the lid open to prevent skewers from burning up, but some charring is going to occur.
  5. Remove from grill and baste again, garnish with sliced green onion and serve.
