Shrimp and Scallop Kabobs

Shrimp and Scallop Kabobs are what Summer grilling is all about.  Cooked and topped with a sweet and zesty garlic chile sauce perfect for serving as an appetizer, side, or main course.

Shish Kabob Recipe

If it’s one thing I know about Summer cookouts its to have a lot of food and keep it simple.  That is why I love these Shrimp and Scallop Kabobs.  They are perfect for backyard outdoor eating and can be served on a stick.  I am a huge shrimp and scallop fan so this recipe was right up my wheel house when making it.  Plus shrimp and scallops cook up pretty quickly so it is a great recipe to use when you need to cook a lot of food in a quicker amount of time.

These Shrimp and Scallop Kabobs are threaded on a metal or wood skewer along with some fresh sliced zucchini and red onion and basted with an amazing garlic chili sauce that has a little bit of a kick and a hint of sweet.  It pairs perfectly with the shrimp and scallops, you will love it!

How long do you cook shrimp and scallops on the grill?

  • Thread your shrimp and scallops on metal or wood skewers along with any vegetables you want to add.  Set the skewers on a preheated grill that has been sprayed with nonstick spray and grill 4-5 minutes with the lid open.  Make sure to turn the skewers at least once, flipping half way through to cook evenly on both sides.

What temperature do you cook shrimp and scallops on the grill?

  • I set the grill to 450 degrees when cooking shrimp and scallops.  You wan to make sure you have preheated the grill for about 10 minutes so it is nice and hot when you add your skewers

What type of skewers do I use?

  • When making kabobs on the grill you can use metal skewers or wooden skewers, it is personal preference.
  • I use both, but make sure it you choose to use wooden skewers you soak them in cold water for at least 30 minutes.  This will prevent the skewers from disintegrate or burning up while grilling.  Your wooden skewers will charcoal a little, that is ok.

Can you marinate scallops?

  • You can marinate scallops but only for a short time, no longer than 5 minutes.  So if you wanted to marinate the shrimp and scallops prior to grilling them you can make up the marinade in a shallow container or dish and add the shrimp and scallops.
  • Marinade at room temperature covered for 5 minutes maximum.  Any longer and the scallops will get very mushy once cooked.

Shrimp and Scallop Kabobs

Shrimp and Scallop Kabobs are what Summer grilling is all about.  Cooked and topped with a sweet and zesty garlic chile sauce perfect for serving as an appetizer, side, or main course.

 

Ingredients:

  • 1 lb fresh or frozen scallops (thawed)
  • 1 lb shrimp fresh or frozen (thawed) tails on or off
  • 1 zucchini, sliced about 1/4 in thick
  • 1 red onion, sliced into 1 in pieces
  • 5 metal or wooden skewers

For garlic chili sauce:

  • Zest of 1 large orange and juice
  • Zest of 1 lime and juice
  • 3 tbsp canola oil
  • 4 tsp minced garlic
  • 1-1/2 tsp chili paste
  • 1-1/2 tsp fresh grated ginger
  • 2 tbsp light brown sugar
  • 1 tsp garlic salt
  • 1 tsp pepper

Directions:

  1. Preheat grill to 450 degrees and spray with nonstick grilling spray.
  2. Thread skewers with shrimp, scallops, zucchini, and red onions.  Repeat until all skewers have been made.
  3. In a small bowl whisk together all ingredients for the garlic chili sauce.  Brush over skewers and place them on hot grill.
  4. Grill with lid open for 4-5 minutes, turning once to cook evenly.  Baste with sauce after turning.
  5. Remove from grill and baste with a little more sauce (optional) and serve.
