Wether you are an avid griller or only break your grill out during the Summer, you are going to want to try these Sweet and Sour Chicken Kabobs.  Kabobs are such a fun and simple way to enjoy all the delicious foods we love to grill and eat.  I seriously think you can cook/grill just about anything, well maybe not a cake..Hmm.

These Sweet and Sour Chicken Kabobs make hot Summer nights a fun way to enjoy family and friends while letting your kids run wild or swim in the pool.  One of the great things about kabobs is they make for easy clean up, I mean how hard can it be to just throw away a stick?  Well that is if you are using wooden skewers not metal.

What is a skewer?

  • A skewer can be made from wood or metal.
  • They are generally thin so your food will thread on them easily and hold in place while you cook.
  • If you are using wood skewers make sure to soak them in cold water for a minimum of 30 minutes.  If you can, soaking them for 24 hours is optimal.  This prevents them from burning and disintegrating when grilling.

Trying to decide between skewers?  Either wood or metal will work great.  You most often see the wood skewers sold at your local grocery stores, so just pick some up and get ready for great meals to come.  If you know when you want to use them just throw them on a rimmed baking sheet and cover with water over night and you will be all set to get “kabobing” the next day.

How do you prepare chicken kabobs?

  1. Using boneless skinless chicken breast, red onion, green pepper, red pepper, and pineapple, cut everything up into 1 inch pieces and place in a large bowl.
  2. Season with garlic salt and pepper and mix to coat.
  3. Begin threading on your skewers, start with a piece of chicken followed by red onion, red pepper, green onion, and pineapple.  Repeat once more and end with a piece of chicken.  Continue the same steps until all skewers have been threaded.  Now you are ready to grill.

How do you cook Chicken Kabobs?

  1. Preheat your grill to 4oo degrees and spray with nonstick grill spray.
  2. Baste your kabobs with sweet and sour sauce.
  3. Place your kabobs on the grill and close it.
  4. Using a basting brush continue to baste with sweet and sour sauce turning the kabobs every 2-3 minutes for 15-20 minutes or until chicken is no longer pink.

These Sweet and Sour Chicken Kabobs were made with homemade sweet and sour sauce.  Do you have to make your own?  No, but it is really easy and taste delicious.

How do I make a simple sweet and sour sauce?

  1. In a medium sauce pan add:
    • 1 cup pineapple juice, from the can
    • 1/3 cup rice wine vinegar
    • 1/3 cup brown sugar
    • 2 tbsp ketchup
    • 2 tbsp reduced sodium soy sauce
    • 2 tbsp corn starch
    • 1 tbsp water
  2. Mix and bring to a boil, reduce heat and let simmer until you are ready to baste your kabobs.

Ingredients:

  • 6 wood skewers (wood or metal), if using wood skewers make sure to soak for 30 minimum.
  • 2 boneless skinless chicken breast, cut into 1 inch pieces
  • 1 large red onion, cut into 1 inch pieces
  • 1 large red pepper, cut into 1 inches pieces
  • 1 large green pepper, cut into 1 inches pieces
  • 1 24 oz container pineapple chunks
  • 1-1/2 tsp garlic salt and pepper

Sweet and Sour Sauce:

  • 1 cup pineapple juice from a can
  • 1/3 cup rice wine vinegar
  • 1/3 cup brown sugar
  • 2 tbsp ketchup
  • 2 tbsp reduce sodium soy sauce
  • 2 tbsp cornstarch
  • 1 tbsp water

Directions:

  1. Preheat grill to 400 degrees and spray with nonstick grill spay.
  2. Place chicken pieces and vegetables into a large bowl and season with garlic salt and pepper.
  3. Thread skewers with chicken, red onion, red pepper, green pepper, pineapple and repeat ending with chicken.  Once all skewers are threaded make sweet and sour sauce.
  4. Place all ingredients for sauce into a medium sauce pan, mix and bring to a slight boil.  Reduce heat and let simmer until ready to baste kabobs.
  5. Place kabobs on the grill and baste with sweet and sour sauce.  Close lid and let cook 2-3 minutes.  Rotate kabobs and baste with sauce.  Keep rotating kabobs every 2-3 minutes for 15-20 minutes until chicken is no longer pink.
  6. Remove from grill and serve with extra sweet and sour sauce.  Serve warm.
