Chunky Monkey Protein Banana Bread
Chunky Monkey Protein Banana Bread
Let’s be honest—banana bread is the universal love language of cozy kitchens. But what if you could take everything you adore about that rich, chocolaty slice and turn it into a protein-packed breakfast or snack? Enter: Healthy Chunky Monkey Protein Banana Bread.
It’s sweet, moist, and loaded with melty chocolate chips (and optional walnuts if you’re really going for that chunky monkey vibe). The best part? It sneaks in Greek yogurt, casein and whey protein, and uses Fit Flour for a better-for-you base. In short: dessert-level satisfaction with meal-prep-level power.

Why You’ll Love This Recipe
- High in protein – casein, whey, and Greek yogurt for staying power
- Naturally sweetened – banana, coconut sugar, or monk fruit
- Gluten-free friendly – works with Fit Flour or AP flour
- Moist and rich – no dry banana bread here
- Loaded with chocolate – and optionally, heart-healthy walnuts

What Ingredients Do You Need?
Wet Ingredients
- Ripe bananas – the more ripe, the sweeter your bread
- Melted coconut oil – adds moisture and healthy fats
- Coconut sugar or monk fruit – refined sugar-free sweetness
- Greek yogurt – adds protein and creaminess
- Eggs + yolk – for structure and extra richness
Dry Ingredients
- Fit Flour or AP flour – your base flour
- Vanilla or chocolate casein + whey protein – sifted for smooth texture
- Unsweetened cocoa powder – for chocolate flavor without the sugar
- Baking powder + baking soda – for rise
- Dark chocolate chips (and/or walnuts) – adds indulgence and crunch
Pro Tip: Boost chocolate depth by adding 1 tsp espresso powder. For even more protein, toss in a scoop of chocolate collagen!
How Do You Make It?
- Prep: Preheat oven to 350°F and line or grease a loaf pan.
- Mix Wet Ingredients: Mash bananas in a large bowl or stand mixer. Add melted coconut oil and sweetener. Mix until smooth. Add in eggs and Greek yogurt and stir until combined.

- Combine Dry + Bake: In another bowl, whisk together Fit Flour, protein powders, cocoa powder, baking powder, and baking soda. Fold dry into wet, then fold in chocolate chips and optional walnuts. Pour into loaf pan and top with extra chocolate chips.
- Bake: Bake for 55–60 minutes or until a toothpick comes out mostly clean. Let cool before slicing.

Can I Make It Gluten-Free or Dairy-Free?
Yes! This recipe is gluten-free friendly with Fit Flour. To make it dairy-free, simply use a plant-based yogurt and a vegan protein powder. The result is still rich, moist, and protein-packed.
How Should I Store It?
- Fridge: Store in an airtight container for up to 5 days.
- Freezer: Wrap slices individually and freeze for up to 2 months.
- Meal Prep Tip: Slice before freezing so you can grab and go!
What Are Some Fun Variations?
- Nut-free? Skip the walnuts and double the chocolate chips.
- Add-ins: Swirl in almond butter, sprinkle on shredded coconut, or add a dash of cinnamon for a cozy upgrade.
