Now that Labor Day is over and Summer is officially winding down we feel a little better about pulling out our slow cookers. The real beauty is that a slow cooker meal or dessert is great for whatever the season or occasion may be.  Today I made the best tasting Slow Cooker Broccoli and Beef on the planet.  It is packed full of tender beef, perfectly cooked broccoli and the most amazing spices your family is going to love you and you are going to love how easy this is to make.

I served my Slow Cooker Broccoli and Beef over rice, but it would be great over some type of pasta or even on its own.  The juices all this slow cooks in marinates the beef so perfectly that every bite is bursting with flavor and is moist and tender. This Slow Cooker Broccoli and Beef would be perfect to take to a pot luck or make for a big family dinner.  It makes a lot, so you can either invite a lot of family and friends over or enjoy it for left overs.

Slow Cooker Broccoli and Beef

The most delicious Slow Cooker Broccoli and Beef you will be excited to get cooking this Fall.
Ingredients
  • 1 1/2 lb. sirloin steak, thinly sliced
  • 1 c. low-sodium beef broth
  • 1/2 c. low-sodium soy sauce
  • 1/2 c. brown sugar
  • 1/2 sweet onion, chopped
  • 1 package dry onion soup mix
  • 3 tbsp. sesame oil
  • 1 tbsp. sriracha
  • 3 cloves garlic, minced
  • 3 green onions, thinly sliced, plus more for garnish
  • 3 tbsp. cornstarch
  • 2 c. broccoli florets
  • 1 red pepper sliced, thin
  • Sesame seeds, for garnish
  • Cooked jasmine rice, for serving
Instructions
  1. In a large slow-cooker, add steak, beef broth, soy sauce, brown sugar, sesame oil, Sriracha, garlic, sweet onion, package of dry onion soup mix, and green onions.
  2. Cover and cook on low until beef is tender and cooked through, 3 1/2 to 4 hours.
  3. When the steak is tender, spoon a few tablespoons of the slow-cooker broth into a bowl and whisk with 3 TBLS cornstarch.
  4. Pour into slow cooker and toss until combined.
  5. Add broccoli and red pepper cook covered 10 more minutes or until vegetables are tender.
  6. Garnish with sesame seeds, green onions and more sauce.
  7. Serve over rice or pasta.
