Tomato Salad
I think I have mentioned this a million times, but salad is so much more than lettuce and dressing. It is a true creation and can be made so many ways and with so many ingredients, the options are nearly endless. Today I served up this Fresh Tomato Salad as a side dish to my Marinated Flank Steak and it was all I needed to complete our meal.
I think the silent assassin in this Fresh Tomato Salad are the chopped up mint leaves. They add such a freshness and enhance all the flavors. Again, one of the amazing things about a salad is that you can add, subtract, or multiply what you put into it. Say for instance you are not a fan of peaches, you could leave them out or add fuji apples or sliced pears. The dressing is a creamy balsamic dressing that isn’t overwhelming and will blend with just about anything you add.
Do I have to use cherry tomatoes?
No. I like to use cherry tomatoes because they have a sweetness to them, but you can use Roma tomatoes, beef steak tomatoes, heirloom tomatoes. It really is up to you, but the cherry tomatoes add a great flavor and texture.
And don’t panic and think this is only a seasonal salad, it’s not! The peaches I used were from the freezer section at my local grocery store. Plus, they come already sliced so you don’t have to worry about slicing them up. They still are fresh and make this salad delicious, and they did not come from a can.
Is frozen fruit healthy?
Frozen fruit and vegetables is a huge money maker in the food industry due to the convenience of them for use all year round. Buying frozen fruit is a good option over canned fruits that have been packed in sugary syrups. Frozen fruit has been picked when ripe and frozen right away conserving most of their nutrients. Always look at the bag of frozen fruit you are purchasing to make sure there are no added sugars.
How do you make Fresh Tomato Salad?
- Start by slicing cherry tomatoes in half and placing in a large serving bowl.
- Add in thin sliced red onions, roughly chopped mint, sliced peaches, feta cheese, and roasted pecans and toss to mix.
- Make the balsamic dressing by adding balsamic vinegar, avocado oil, and brown sugar to a mason jar or sealable container. Shake until mixed and pour over salad when ready to serve.

Ingredients:
- 2 16oz packages of fresh sliced frozen peaches, thawed
- 2 10.5oz container cherry tomatoes, halved
- 1 5oz container feta cheese
- 1 .66oz container fresh mint, roughly chopped
- 1/2 red onion, thinly sliced
- 1/2 cup roasted peacans
For the Balsamic Dressing:
- 1/2 cup balsamic vinegar
- 1/4 cup avocado oil
- 1 tbsp brown sugar
Directions:
- Start by slicing cherry tomatoes in half and placing in a large serving bowl.
- Add in thin sliced red onions, roughly chopped mint, sliced peaches, feta cheese, and roasted pecans and toss to mix.
- Make the balsamic dressing by adding balsamic vinegar, avocado oil, and brown sugar to a mason jar or sealable container. Shake until mixed and pour over salad when ready to serve.
- Season with salt and pepper (optional).

It looks stunning but you would not use all 3/4 cup of dressing would you? Just to your desired tastes I assume. I have not used avocado oil yet. Can you taste the difference?
Avocado oil has a creamy flavor, but doesn’t taste off or weird. And yes, add as much or as little dressing as you want.
