Watermelon Feta Salad Recipe

When it comes to salads I can’t emphasize enough how much fun they are to make and the variations are ultimately endless.  This Easy Watermelon Feta Salad incorporates simple, yet delicious flavors that compliment each other with every bite.

What is in Watermelon Feta Salad?

As I mentioned salad is a smorgasbord of flavors, so really you can add or subtract to this Easy Watermelon Feta Salad.  I prefer to keep the flavors bold, but minimal so you don’t loose out on the main ingredient, the watermelon.  So a few of the items I have added are:

  • Watermelon, but I grilled it
  • Feta cheese, because it has a little bite to it
  • Red onion, for a little heat
  • Honey roasted chopped pecans, for a little sweet and crunchy texture

How do you grill watermelon?

  1. Cut your watermelon into 1-1/2 inch slices, then cut the slices in half leaving the rhine attached.
  2. Preheat grill to 450 degrees and spray with non-stick grilling spray.
  3. Place each piece of watermelon on the grill and grill for 2-3 minutes a side.
  4. Remove from grill and let cool.  Remove rhine and chop into 1/2 inch cubes.

What to serve with Watermelon Feta Salad?

Again, one of the things I love about salad is it is a team player, and goes with almost any meal.  But this particular salad would be a sensational accompaniment to Beef Shish KabobsOven Baked BBQ ChickenFilet Mignon, or Chicken Fried Steak and Gravy.

There really is no limit to what you can pair this with because it’s almost like two sides in one.  You have your salad and your fruit!

What dressing do you use for Watermelon Feta Salad?

I used a homemade balsamic vinaigrette.  It is lite, yet flavorful and won’t overpower your main ingredients in your salad.

How do you make homemade Balsamic Vinaigrette Dressing?

  1. In a sealable glass jar or container add:
    • 2 tbsp balsamic vinegar
    • 1/2 tsp dijon mustard
    • 3 tbsp avocado oil
    • 2 tbsp olive oil
    • 1 tsp sugar
    • 1 tbsp honey
  2. Whisk or shake well and store in refrigerator until ready to use.

Do I have to grill the watermelon?

No, you don’t have to grill the watermelon for the salad, but I would if you could!  It gives the watermelon a slightly smokey flavor and caramelizes it, adding just another layer to the sweetness.  The sweet taste of the watermelon goes so perfectly with the red onion and feta so it isn’t too sweet or to tart.

Easy Watermelon Feta Salad

Ingredients:

Salad:

  • 3 cups grilled watermelon, cut into cubes
  • 2 cups baby spinach
  • 2 cups spring mix
  • 1 cup crumbled feta cheese
  • 1/2 red onion, sliced thin and left in rings (optional, you can chop it)
  • 3/4 cup honey roasted pecans, chopped

Balsamic Dressing:

  • 2 tbsp balsamic vinegar
  • 1/2 tsp dijon mustard
  • 3 tbsp avocado oil
  • 2 tbsp olive oil
  • 1 tsp sugar
  • 1 tbsp honey

Directions:

  1. Pre-heat grill to 450 degrees and spray with non stick grilling spray.
  2. Cut watermelon into 1-1/2 inch slices, then cut in half.  Place on heated grill and cook for 2-3 minutes per side.  Remove and set aside to cool.  Remove rhine and cut into 1/2 inch cubes.
  3. In a large bowl add all salad ingredients and mix to combine.
  4. Make dressing in a sealable container and shake to mix.  Pour over salad when ready to serve and mix to combine thoroughly.  Season with salt and pepper (optional).

If you are not grilling watermelon, simply cut into small cubes and add to salad.
