Life gets crazy at my house, especially during the week so having an easy and delicious soup to make is right up my wheel house. This recipe is amazing and will refuel your tank when after being on the go all day.
Loaded with tender beef tips and gravy, hearty potatoes, chunky cuts of carrots, peas, beans, and corn this soup recipe has it all.
What are the ingredients for this recipe?
- 2-15oz packages of refrigerated cooked beef tips in gravy
- 2 tbsp oil
- 1 medium onion, chopped
- 2 tbsp minced garlic
- 2 tbsp tomato paste
- 6 cups beef broth
- 3 medium potatoes, peeled and cubed
- 1/2 cup frozen green beans
- 3 carrots, peeled and diced
- 2 stalks of celery, diced
- 3/4 cup pearl barley
- 1/2 cup frozen peas
- 1 tsp dry onion soup mix
- 1/2 cup frozen corn
- Fresh rosemary for garnishing
I have to say this recipe is one of my favorite and using the beef tips and gravy that have already been cooked cuts down on prepping and cooking the soup 100%. Not to mention it gives the soup such wonderful texture and flavor.

How to make beef barley soup
- In a large stockpot add oil and sauté onion and garlic until fragrant.
- Add in beef broth, tomato paste, celery, carrots, barley, dry onion soup mix, and potatoes. Cover and cook over medium heat for 30 minutes.
- Add frozen peas, corn and beans. Cover and cook an additional 20 minutes. Uncover, stir and let simmer 5 minutes until soup thickens slightly. Garnish with fresh rosemary.
Do you cook barley before adding to soup?
No, you don’t have too. You can add it in during the second step along with the other ingredients and cook covered for 30 minutes. It will turn out great.
What is the best cut of beef for beef barley soup?
I like to use beef tips, they are moist and taste amazing in the soup. You can also use beef stew meet or chuck roast cut into cubs.
Can you freeze barley soup?
Yes. Place cooked, cooled soup in air tight containers or large zip lock freezer bags. Keeps in the freezer for about 3 months.
