What Are Potato Chip Cookies?

These cookies are a fun, flavorful twist on classic butter cookies. The base is made with flour, sugar, vanilla, and butter — then crushed potato chips are folded in for that delightful salty crunch. Add in some finely chopped glazed pecans for an extra touch of sweetness and texture.

Ingredients

  • 1 lb butter + 1 tbsp for topping

  • 1 cup sugar + ½ cup for topping

  • 3¼ cups flour

  • 1 tsp vanilla

  • ½ cup glazed pecans, finely chopped

  • 1½ cups crushed potato chips

  • Powdered sugar, for sprinkling (optional)

💡 Tip: Use your favorite brand of plain potato chips — Lays, Ruffles, Kettle Brand, or Pringles all work perfectly! Just make sure they’re original flavor, not seasoned.

How to Make Potato Chip Cookies

  1. Preheat oven to 300°F.

  2. Cream butter and sugar in a stand mixer or using a hand mixer. Slowly blend in the flour, pecans, and vanilla.

  3. Gently mix in the crushed potato chips.

  4. Using a spoon or cookie scoop, drop dough onto an ungreased cookie sheet. Dip the bottom of a glass in melted butter, then sugar, and lightly flatten the cookies.

  5. Bake for 18 minutes, then remove from the oven and dust with powdered sugar.
