Cheesy Cauliflower Casserole
Why is it that whenever we make vegetables our kids immediately turn their nose up? I remember thinking vegetables were so boring to eat, but with this creamy and delicious cheesy cauliflower casserole made with three kinds of cheese and topped with crispy bacon, even the “big” kids will be asking for more. I know if may be a stretch to think your kids will enjoy cauliflower, but when you mix it with a little cream and tons of cheese and bake it in the oven the cauliflower just melts in your mouth and the though of eating a vegetable gets long forgotten. This is one of my favorite low carb casseroles to make because it’s simple, easy, and the flavor is insane.
You wouldn’t think a cauliflower casserole could have so much flavor but when you sauté it in a little bacon grease the magic begins to happen.
How do you make cauliflower cheese casserole?
- Preheat oven to 400 degrees. In a large skillet cook chopped bacon until crisp, set aside and reserve 2 Tablespoons of bacon grease in skillet.
- Add cauliflower to skillet and cook over medium high heat for 3 minutes until the cauliflower begins to soften. Add in 1 tablespoon of minced garlic and stir to combine, then pour the bacon back into the skillet along with 1 teaspoon garlic salt and pepper. Pour cream over and mix.
- Add half the cheese and mix to combine. Top with the remaining cheese and bake for 15 minutes until cheese is hot and bubbling and cauliflower is tender.

- 4 cups cauliflower
- 6 pieces of thick cut bacon chopped and cooked
- 1 tbsp garlic minced
- 1 tsp garlic salt
- 1 tsp black pepper
- ½ cup heavy cream
- 2 cups grated Colby cheese divided
- 2 cups grated Parmesan cheese divided
- 2 cups grated Muenster cheese divided
- Fresh chopped green onion and sage for garnish
