  • Transfer to a 9×13 casserole baking dish lightly coated with nonstick cooking spray and cover with foil.

  1. Preheat oven to 400 degrees and spray a 9×13 baking dish with nonstick cooking spray.

  2. In a large bowl mix together, Bisquick, eggs, milk, cheese, onions, and bacon and pour into baking dish.  Place in oven and bake for 35-40 minutes, remove from oven and set aside.

  3. Pour frozen tater tots on a rimmed baking sheet and bake for 20 minutes.  Pour cooked tater tots over the top of the baked casserole and top with remaining cheese.

  4. Cook for 10 more minutes until cheese has melted and top with diced avocado, red pepper, bacon, and chopped chives.  Serve immediately.

  • 1 pound  bag frozen tater tots
  • 1 cup Bisquick
  • 4 eggs
  • 2 cups whole milk
  • 1 cup diced red onion
  • 3 cups colby jack cheese, divided
  • 6 pieces cooked bacon, chopped and divided
  • 1 teaspoon pepper
  • 1/2 teaspoon salt
  • 1 avocado, diced
  • 1 red pepper, diced
  • 2 Tablespoons chopped chives

Directions:

  1. Preheat oven to 400 degrees and spray a 9×13 baking dish with nonstick cooking spray.
  2. In a large bowl mix together, Bisquick, eggs, milk, 1 cup cheese, onions, 5 pieces of bacon, salt and pepper and pour into baking dish.  Place in oven and bake for 35-40 minutes, remove from oven and set aside.
  3. Pour frozen tater tots on a rimmed baking sheet and bake for 20 minutes.  Pour cooked tater tots over the top of the baked casserole and top with remaining 2 cup of cheese.
  4. Cook for 10 more minutes until cheese has melted.
  5. In a small bowl mix diced avocado, red pepper, bacon, and chopped chives and place on top of casserole.  Serve warm with ketchup (optional).
