Why is it that whenever we make vegetables our kids immediately turn their nose up? I remember thinking vegetables were so boring to eat, but with this creamy and delicious cheesy cauliflower casserole made with three kinds of cheese and topped with crispy bacon, even the “big” kids will be asking for more.  I know if may be a stretch to think your kids will enjoy cauliflower, but when you mix it with a little cream and tons of cheese and bake it in the oven the cauliflower just melts in your mouth and the though of eating a vegetable gets long forgotten.  This is one of my favorite low carb casseroles to make because it’s simple, easy, and the flavor is insane.

You wouldn’t think a cauliflower casserole could have so much flavor but when you sauté it in a little bacon grease the magic begins to happen.

How do you make cauliflower cheese casserole?

  1. Preheat oven to 400 degrees. In a large skillet cook chopped bacon until crisp, set aside and reserve 2 Tablespoons of bacon grease in skillet. Step one in making cheesy cauliflower casserole.   2. Add cauliflower to skillet and cook over medium high heat for 3 minutes until the cauliflower begins to soften.  Add in 1 tablespoon of minced garlic and stir to combine, then pour the bacon back into the skillet along with 1 teaspoon garlic salt and pepper.  Pour cream over and mix. step two in making cheesy cauliflower casserole. Cauliflower cheese casserole is the perfect go to side dish when you are in a hurry and need something that will not only be easy to prepare, but also fast to bake.

It goes perfect with anything else you are serving and will even appease the family and friends who are on a low carb or keto nutrition plan.

You can also keep this cheesy cauliflower casserole vegetarian by leaving on the crispy bacon bits and cooking the cauliflower in coconut oil instead of the bacon grease.

I love using the combination of grated parmesan, muenster, and colby cheeses.  Each one has its own distinct flavor, yet blend so well together and makes this casserole super cheesy and spectacular.

Ingredients

  • 4 cups cauliflower
  • 6 pieces of thick cut bacon chopped and cooked
  • 1 tbsp garlic minced
  • 1 tsp garlic salt
  • 1 tsp black pepper
  • ½ cup heavy cream
  • 2 cups grated Colby cheese divided
  • 2 cups grated Parmesan cheese divided
  • 2 cups grated Muenster cheese divided
  • Fresh chopped green onion and sage for garnish
