A Creamy, Cheesy Twist on Cauliflower

Why is it that the moment we say “vegetables,” kids (and let’s be honest, some adults too) start to protest?
I used to feel the same way — vegetables just weren’t that exciting. But that was before I discovered this cheesy cauliflower casserole.

Now, I’m telling you — when you mix tender cauliflower with cream, a trio of melty cheeses, and a sprinkle of crispy bacon, something magical happens.
It’s rich, creamy, and so full of flavor that you’ll forget you’re even eating veggies.

This is one of my favorite low-carb casseroles to make because it’s simple, comforting, and ridiculously delicious. And when you sauté the cauliflower in a little bacon grease before baking? That’s when the magic really begins.

🥓 How to Make Cheesy Cauliflower Casserole

Ingredients

  • 4 cups cauliflower

  • 6 pieces thick-cut bacon, chopped and cooked

  • 1 tbsp minced garlic

  • 1 tsp garlic salt

  • 1 tsp black pepper

  • ½ cup heavy cream

  • 2 cups grated Colby cheese, divided

  • 2 cups grated Parmesan cheese, divided

  • 2 cups grated Muenster cheese, divided

  • Fresh chopped green onion and sage for garnish

Instructions

  1. Preheat oven to 400 degrees. In a large skillet cook chopped bacon until crisp, set aside and reserve 2 Tablespoons of bacon grease in skillet. Step one in making cheesy cauliflower casserole.   2. Add cauliflower to skillet and cook over medium high heat for 3 minutes until the cauliflower begins to soften.  Add in 1 tablespoon of minced garlic and stir to combine, then pour the bacon back into the skillet along with 1 teaspoon garlic salt and pepper.  Pour cream over and mix. step two in making cheesy cauliflower casserole.
