Sloppy Joe Cornbread Casserole

Sloppy Joe Cornbread Casserole is a simple family friendly meal made with ground beef and jiffy cornbread.  This is a  sloppy joe hot meal ready in 20 minutes.

Sloppy Joe Cornbread Casserole

Sloppy joe cornbread casserole is made with ground beef, one box of jiffy cornbread, onions, peppers, and sloppy joe seasoning.  This is a super simple cornbread topped casserole that your family will love and is ready in 20 minutes.  All the flavors are baked together and come out warm and delicious.  This will be the perfect weeknight meal to share at your dinner table that your whole family will enjoy.

What is cornbread casserole?

Cornbread casserole is made in a skillet or casserole dish for easy preparation and serving.

This cornbread casserole recipe is made with jiffy cornbread mix, that is mixed according to package directions with grated cheese added in.

Sauté the ground beef, onions, peppers, and sloppy joe seasoning and pour into prepared baking dish or skillet.  Top with cornbread mixture and bake.

How to make cornbread casserole

  1. Preheat oven to 400 degrees.
  2. In a 10 inch skillet over medium heat cook ground beef and drain.  Add in diced onions, peppers, garlic salt, sloppy joe seasoning and tomato sauce.  Mix and cook until heated through.
  3. Prepare jiffy cornbread mixture according to package directions and add in grated cheddar cheese.  Mix to combine and pour over top of sloppy joe mixture in skillet.
  4. Bake 15 minutes and garnish with fresh chives.

Does cornbread casserole need to be refrigerated?

Yes.  Place cornbread casserole in the refrigerator and cover with foil.

Sloppy Joe cornbread casserole will keep in the refrigerator for 2 days.

How to make jiffy cornbread casserole?

  1. In a large bowl mix jiffy cornbread according to package directions.
  2. Add in 1 cup grated cheddar cheese and mix.
  3. Pour over the top of prepared sloppy joe mixture and bake 15 minutes.

  • 1 lb ground beef
  • 1 package sloppy joe seasoning packet
  • 1 15 oz can tomato sauce
  • 1 green pepper diced
  • ½ red pepper diced
  • ½ onion diced
  • 1 tsp garlic minced
  • 1 tsp pepper
  • ½ tsp garlic salt
  • 1 box jiffy cornbread mix made according to package directions.
  • 1 cup grated cheddar cheese

Instructions
