Spicy Oven Roasted Red Potatoes

Oven roasted red potatoes will be the perfect side dish for all your Summer cookouts.  Bursting with flavor, crispy on the outside, tender on the inside and ready in 30 minutes.

Side dishes are one of my favorite things to make, why? because there are ba-zillions of things you can make to go with anything.  That is why this roasted red potatoes recipe is one of my favorites, especially for the Summer time. 

It requires minimal clean up, very few ingredients, and is a no fail side dish of crispy, yet tender potatoes to go with all your backyard cookouts.

These oven roasted red potatoes are seasoned simply with a pack of taco seasoning, fresh cracked black pepper, and if you really want to kick the heat up lather on some chili sauce or serve it along side for dipping.

How to roast red potatoes

  1. Preheat oven to 400 degrees and line a rimmed baking sheet with parchment paper and set aside.  Cut potatoes into quarters and place in a large mixing bowl.Three images showing the steps how to make roasted red potatoes.   2. Melt 1 tablespoon of coconut oil in a microwave safe dish and pour over potatoes and stir to coat.  Add taco seasoning and fresh cracked pepper, stir again.  Pour potatoes onto prepared baking sheet and bake for 30 minutes.  Garnish with fresh parsley and serve with chili sauce for dipping.Four images showing the second steps of how to make oven roasted red potatoes. How long to roast baby red potatoes

Oven roasted red potatoes take about 30 minutes to roast in the oven at 400 degrees.  You want them slightly crisp on the outside, and tender, but not falling apart on the inside.

What to season roasted red potatoes with

You can season roasted red potatoes with so many different things:

  • taco seasoning
  • ranch dressing (dry mix)
  • garlic salt and pepper
  • olive oil
  • parmesan cheese
  • dry onion soup mix
  • butter and garlic

What goes with roasted red potatoes?

The great thing about this roasted red potato recipe is that it can go with some many things.  They go great with chicken, steak, pork chops, kielbasa, or can be thrown into a potato salad, the options are endless.

What is the difference between white potatoes and red potatoes?

Besides the obvious difference in color, red potatoes are known to have a sweeter taste than white potatoes.

Red potatoes also are a little less starchy than a white potato.

Ingredients

  • 1.5 LB baby red potatoes quartered
  • 1 tbsp coconut oil melted
  • 1 packet taco seasoning
  • 2 tsp fresh cracked pepper
  • chopped parsley to garnish
  • chili paste for dipping (optional)

Instructions
