Side dishes are one of my favorite things to make, why? because there are ba-zillions of things you can make to go with anything. That is why this roasted red potatoes recipe is one of my favorites, especially for the Summer time.
It requires minimal clean up, very few ingredients, and is a no fail side dish of crispy, yet tender potatoes to go with all your backyard cookouts.
These oven roasted red potatoes are seasoned simply with a pack of taco seasoning, fresh cracked black pepper, and if you really want to kick the heat up lather on some chili sauce or serve it along side for dipping.
How to roast red potatoes
- Preheat oven to 400 degrees and line a rimmed baking sheet with parchment paper and set aside. Cut potatoes into quarters and place in a large mixing bowl.
- Melt 1 tablespoon of coconut oil in a microwave safe dish and pour over potatoes and stir to coat. Add taco seasoning and fresh cracked pepper, stir again. Pour potatoes onto prepared baking sheet and bake for 30 minutes. Garnish with fresh parsley and serve with chili sauce for dipping.
