Squash and Zucchini Casserole is fast, healthy, and delicious making it the perfect side dish all Summer long.

We all have the best intentions when planning and planting a garden, insert my Grandparents for example.  Anything and everything they touched grew beyond belief so I grew up eating a ton of fresh vegetables, which was amazing, and that is when I grew to love squash and zucchini.

This squash and zucchini casserole is perfect for all those extraordinary gardeners who just have that green thumb or if you are like me and your thumb is not so green the grocery story generally has a pretty selection of them too, thank goodness.

So why is this squash and zucchini casserole so easy?  Because it literally requires a few simple steps that won’t take longer than 10 minutes to throw together and topped with a mixture of panko crumbs, melted butter, and parmesan cheese it is sensational.

How to make a squash and zucchini casserole

  1. Preheat oven to 350 degrees.  Slice squash and zucchini and arrange in a lightly sprayed 9 inch casserole dish.  I lined mine up alternating 2 squash/3 zucchini.  Drizzle with avocado oil and season with garlic salt and pepper. Four steps making squash and zucchini casserole.   2. In a small bowl mix melted butter, fresh grated parmesan cheese, and panko crumbs.  Spread evenly over the top of seasoned vegetables and cover with foil.  Place in oven for 30 minutes, then remove foil and turn oven to High broil, and broil casserole for 3-4 minutes until cheese has turned golden brown.Four images of making squash and zucchini casserole. Zucchini is full of vitamin C, and may help aid in lowering your blood pressure and protection against the clogging of your arteries.

What are the benefits of squash?

Squash is rich in vitamins particularly vitamin C, B6, vitamin A and manganese, which helps the body process fats and carbohydrates and enhance the bodies bone strength.

Is zucchini a good vegetable?

Yes.  It can be eaten cold, raw, and cooked and is nutrient dense which is good for overall health support.

Is zucchini good for weight loss?

Zucchini is a great source of fiber and contain a lot of water, which when consumed will make you feel fuller longer.  It is also a good food source to add when trying to loose weight because it is low in calories.

Is squash a carb?

Zucchini and summer squash are low in carbohydrates, making them a good food source for low carb or keto diets( if you leave off the panko crumbs) , however other members of the squash family such as acorn, butternut, and buttercup are a starchy form of squash and higher in carbohydrates.

Ingredients

  • 2 lbs zucchini and yellow squash cut into ¼-inch slices
  • 3 Tbsp avocado oil or oil of choice
  • 1 tbsp garlic salt
  • 1 tbsp pepper
  • 3/4 cup freshly grated parmesan cheese
  • cup Panko breadcrumbs
  • 1 tbsp melted butter
  • 2 Tbsp dried or fresh parsley to garnish
