Banana Coconut Muffins

Never underestimate the power of breakfast and in this case the deliciousness that comes with biting into one of these super moist banana coconut muffins.

Each bite will hit you with bold banana flavor, sweetened coconut and topped with melted semi sweet chocolate to make these banana coconut muffins amazing.

The mixture of fresh bananas, shredded coconut and semi sweet chocolate is truly magical.  If you love muffins and you love the taste of banana and coconut you will not want to pass on this banana coconut muffin recipe.

How to make banana coconut muffins

  1.   2. In a medium bowl sift together flour, baking powder, salt, and all spice and set aside. A large glass mixing bowl with a sifter filled with the dry ingredients to use for making banana coconut muffins by, The Food Cafe

  4.   5.   6. How to melt chocolate in the microwave

Using a glass microwave safe dish or measuring cup add chocolate chips and microwave in 30 second increments until chocolate is smooth and melted.  Make sure to stir the chocolate chips between each increment.

How to melt chocolate on stove

Melting chocolate on the stove requires a different technique than in the microwave.  Create a double boiler by adding water to a pot about 1/2 way full.

Then using a heat safe bowl that fits just on top of the pot without dropping you can add your chocolate chips and over low heat allow the steam to melt the chocolate, stirring often.

Banana coconut muffins are perfect to make for brunch or if you are just in the mood for a moist and delicious treat topped with chocolate anytime of the day.
