Salmon with Creamy Avocado Sauce Recipe

Salmon and avocado, if you have never had the combination let me introduce you to it!  This Salmon with Avocado Creamy Avocado Sauce is one of the best flavor combinations I have had.  Cooking the salmon in the skillet gives it this amazing, almost caramelized outside texture while keeping a creamy, sink your teeth into inside.  Then topping it off with a smooth, almost whipped avocado sauce makes this salmon over the top sensational. 

I love salmon, and growing up in Washington State we ate a lot of fresh salmon.  My Dad was and still is an avid fisherman so we ate our fair share of fresh caught salmon.  There are so many ways to create delicious salmon meals, but keeping it simple and easy and cooking it in a skillet is one of my favorite ways to prepare it.  One of the great things about cooking salmon is that it doesn’t require a long cooking time and retains tons of flavor and has many health benefits.

Can you pan fry salmon?

Yes.  I use this method to cook salmon a lot and it is very quick and easy to do.

  • Simply use a heavy cast iron skillet or skillet that you are use to cooking with and know the temperature it can reach.  Melt a couple tablespoons of butter or use a cooking cooking oil.
  • Season salmon and place skin side down.  Allow to cook about 3 minutes over medium high heat and then flip to flesh side and cook 4 minutes more.
  • Remove from heat.  The fish will continue to cook slightly once removed from the heat source so make sure not to over cook it.  The fish should be slightly pink and still a little moist.

What is the best seasoning for salmon?

Salmon can be seasoned with many different spices and marinades.  If you are looking for a simple and easy way to season your salmon that taste great I like to use garlic salt, pepper, and a little bite of fresh lemon juice.  Some additional spices that are great are:

  • garlic powder
  • onion powder
  • paprika
  • old bay seasoning
  • kosher salt
  • lemon zest
  • brown sugar
  • teriyaki sauce

Do you keep the skin on when cooking salmon?

Yes.  I like to keep the skin on because the skin adds flavor.  It also makes it easier to cook the salmon and holds it together.  Begin cooking salmon skin side down, then using a good spatula you can flip it easier onto the flesh side without it falling apart.  Don’t worry though, if you are not into eating the skin the flesh will peel off from the skin easily.

How do you make creamy avocado sauce?

  1. In a food processor or blender add:
    • 1 avocado
    • 1/2 tsp lime juice
    • 2 tbsp cilantro
    • 1 tbsp mayonnaise
    • 1 tbsp avocado oil
    • 1/2 tsp garlic salt
  2. Blend until smooth and scoop out even amounts to place on salmon filets.

Ingredients

  • 4-5 oz salmon filets
  • ½ tsp garlic salt
  • ½ tsp garlic pepper
  • 2 tbsp sesame oil
  • 2 tbsp honey
  • 1 tsp minced garlic
  • ½ tsp cayenne pepper
  • ½ tsp onion powder
  • 2 tbsp butter
  • chopped cilantro and sesame seeds for garnish optional

For the Avocado Sauce:

  • 1 avocado
  • ½ tsp lime juice
  • 2 tbsp cilantro
  • 1 tbsp mayonnaise
  • 1 tbsp avocado oil
  • ½ tsp garlic salt

Instructions

Season salmon filets with garlic salt and garlic pepper

    In a small bowl mix together sesame oil, honey, minced garlic, cayenne pepper, and onion powder; set aside to use to baste the salmon.

      Heat a large skillet over medium high heat and add butter. Once it melts add in the salmon filets skin side down. Baste with honey mixture and cook for 3 minutes. Flip onto flesh side and cook an additional 3-4 minutes, until salmon is light pink, remove from heat and baste a few more times.

        In a food processor or blender add all ingredients for avocado sauce and blend until smooth. Add even amounts to top of salmon and garnish with parsley and sesame seeds (optional).
