Roasted mushrooms are plump and juicy and really take on the flavor you are incorporating with them, and in this recipe it is a creamy, warm garlic butter with fresh thyme sauce. You can roast them right in your cast iron skillet and then douse them with the garlic butter right when they come out of the oven. The mushrooms will be so tender and delicious, you will love them.
How do you make roasted mushrooms?
- Pre-heat oven to 400 degrees
- wash and clean fresh mushrooms and then place in a large bowl and toss with olive oil and season with garlic salt and pepper.
- Place mushrooms in a single layer in a 10 inch skillet or sheet pan.
- Bake for 25 minutes, stirring mushrooms halfway through.
- Take mushrooms out of oven and discard juices. Douse with warm garlic butter and garnish with fresh chopped thyme.
How do you make garlic butter?
- In a small sauce pan over medium heat, melt 1/2 cup of butter and stir until butter turns a golden brown color, about 5 minutes.
- Remove from heat and add in garlic, thyme, and lime juice. Stir to combine.

- Pre-heat oven to 400 degrees, place washed mushrooms in a large bowl and toss in olive oil and season with garlic salt and pepper.
- Place mushrooms in a skillet or sheet pan in a single layer and bake for 15 minutes stirring once about halfway through.

- 4 cloves garlic, minced
- 1 teaspoon fresh thyme

- Preheat your oven to 400 degrees. Toss mushrooms in oil, garlic salt and pepper, place in an oven-proof skillet or sheet pan in a single layer and roast in the oven until golden, about 25 minutes, stirring the mushrroms half way through.
- While mushrooms are roasting, cook butter in a saucepan over medium heat until it starts to turn a golden brown color. Remove from heat and mix in the garlic, thyme and lemon juice.
- Drain mushrooms from cooking oil/juices if any. Keep in the skillet or transfer to serving bowl and pour the garlic butter sauce right over the mushrooms toss to combined. Adjust seasoning with garlic salt and pepper to taste. Serve immediately.
