Tips for making the best Cheesy Parmesan Chicken Garlic Bread:
- When frying the chicken you don’t have to use peanut oil, you can also use canola oil, safflower oil or sunflower oil. Any of them will work.
- Make sure to get your oil nice and hot. You only want to have the chicken in the oil for 2-3 minutes to quickly cook and get crisp.
- When hollowing out the bread, cut the baguette in 3 pieces and then take a knife and gently cut around the inside to loosen the bread. Then take your fingers or a spoon and scrape out the inside so you can see all the way through it. You want it as hollow as possible without compromises the outside.
- Do you have to make the herb butter compound? No. You can melt plain butter and mix it with minced garlic to baste on top of the bread too. I just like the added flavors the fresh herbs give.

Cheesy Parmesan Chicken Garlic Bread
Ingredients:
- 1 Boneless, skinless chicken breast, sliced into 1 inch pieces
- 1 cup white cornmeal
- 3 eggs, beaten
- 1 cup seasoned bread crumbs
- 2 8oz packages sliced mozzarella cheese
- 1 large french baguette
- 2 cups marinara sauce
- Peanut oil, for frying
- 1 heavy skillet
- aluminum foil and baking sheet
For the herb butter compound:
- Herb Compound Butter
- 1 cube butter, melted
- 2 Tablespoons rosemary
- 2 Tablespoons thyme
- 2 Tablespoons garlic
- 2 Tablespoons grated parmesan
Directions:
- Pre-heat oven to 350 degrees.
- In a heavy sauce pan or skillet heat on medium high heat, peanut oil. Enough so the chicken will be covered when frying, about 2 inches high.
- In 3 different bowls place the cornmeal, eggs (beaten) and seasoned bread crumbs.
- Take a piece of chicken and coat both sides with cornmeal, then dip into the eggs wash, and then cover both sides in bread crumbs. Place in hot oil and fry 2-3 minutes until golden brown. Set aside on a paper towel to drain excess oil. Repeat with all pieces of chicken.
- Cut baguette into 3 equal pieces and hollow out the inside with a knife to loosen bread and then remove with a spoon or fingers, making sure to keep the out surface in tact.
- Wrap each piece of chicken with 2 pieces of mozzarella cheese and stuff inside the hollowed baguette, approximately 2 pieces of chicken per section of bread.
- Slice the 3 sections of bread into one inch pieces and assemble on a lightly greased piece of foil and place on a baking sheet.
- Baste the bread with the butter compound and cover completely with the foil. Place in the oven for 20 minutes, or until cheese has melted. Remove from oven and cover with more melted butter and serve with marinara sauce for dipping.
