I have to say comfort food that starts and ends with creamy goodness means whomever is eating, is eating with a smile from ear to ear.  This Creamy Parmesan Bacon Potato Gnocchi is one of those recipes you will want to bookmark and save.  It really is sensational.  The flavor from the shallots, bacon, and garlic may be simple but pack a punch.  Mix that with cream and parmesan cheese and you have made a love connection.  

One of the things I am big about is making recipes that don’t require hours in the kitchen, and this Creamy Parmesan Bacon Potato Gnocchi is ready in 20 minutes.  If you have never cooked gnocchi it only takes a few minutes and it is done.  There is no boiling for 7-10 minutes, it literally is done in 3 minutes.  As soon as those little pieces of potato goodness begin to float, there done and the rest of the recipe comes together shorty there after.  Its perfect for a week night meal after a long day of work and running the kids around town.  Toast up some warm sourdough bread for dipping and dinner is done.

What is Gnocchi?

Gnocchi is from the Italian origin, and is considered to be small dumplings.  Made from potatoes that have been mashed and combined with  flour, gnocchi is served in soup and with sauce.  When pronouncing “Gnocchi”  the “g” is silent and the “cc”  sounds like a “k,” pronounced “nake” with a short “a” and long “e.”

How long do you cook Gnocchi?

  • If you are making homemade gnocchi the cook time is approximately 2-4 minute.
  • If you are using store bought gnocchi you cook it for 3 minutes.  Simply pour the gnocchi into a pot of boiling water, stir and cook 3 minutes.  You will know when they are done because they will float to the top and be tender.  Drain and use as desired.

What does gnocchi taste like?

If you have ever had a dumpling the taste and texture are similar.  Gnocchi is made from potato and flour so they do not have a lot of flavor.  They are dense and chewy and melt in your mouth when made in soups and sauces.

Is gnocchi healthy?

Gnocchi may not be completely healthy since they are made of potatoes and flour consisting of a lot of carbohydrates, they are a healthier option to white pasta seeing the potatoes add plenty of potassium.

Yes.  Gnocchi is vegan.  It is only made up of two ingredients, potatoes and flour.

How do you make Creamy Parmesan Bacon Potato Gnocchi?

  1. Cook gnocchi according to package directions, drain and set aside.
  2. In a skillet cook bacon and reserve bacon drippings.  Remove bacon and set aside.
  3. In the same skillet over medium heat add the diced shallots, minced garlic, and chopped sun dried tomatoes.  Sauté 2-3 minutes.  Add in the gnocchi and sauté another minute.
  4. Stir in chicken stock and dijon mustard and let come to a slight boil.  Add in heavy cream and parmesan cheese.  Stir until cheese has melted.  Stir in spinach and cook until wilted about 2 minutes.  Add the bacon back in stirring to combine.
  5. Season with garlic salt and pepper, garnish with fresh cut basil, additional parmesan cheese and serve warm.

Ingredients:

  • 1- 16oz package Gnocchi, cooked according to package directions
  • 5 pieces of bacon, cooked and crumbled
  • 1- 8.5oz jar sun dried tomatoes, drained
  • 1/2 cup shallot, diced
  • 2 tbsp minced garlic
  • 1 tsp dijon mustard
  • 1/2 cup chicken stock
  • 1-1/2 cups heavy cream
  • 1/2 cup grated parmesan
  • 1/2 tsp garlic salt
  • 1/2 tsp black pepper
  • fresh basil to garnish

Directions:

  1. Cook gnocchi according to package directions, drain and set aside.
