Grilled Cheese Tomato Soup Sandwich

One of my favorite things to fix it a good old fashion grilled cheese sandwich.  They are the epitome of comfort food and perfect for any day of the week.  This Grilled Cheese Tomato Soup Sandwich combines two all time comfort foods into one delicious and filling meal.  Grilled cheese sandwiches can be made with so many varieties of cheese, and I love the combination of the cheddar, swiss, and havarti.

Each cheese has a unique flavor and which blend so well together and don’t over power each other.  If you are looking for the cheesiest of grilled cheese sandwiches then you will love this version.  Baking it gives the bread a toasted texture, but soft and gooey thanks to the soup mixture.

Grilled Cheese Sandwiches are such a fun family food to make, for some reason a good grilled cheese always brings a smile to everyones face.  They just scream comfort food and always taste so delicious.  There is just something about warm melted cheese being hugged by two pieces of crisp sourdough bread, you just can’t go wrong.  They are the perfect sandwich to turn that frown upside down.

How do you cook grilled cheese?

  1. Preheat oven to 350 degrees and lay out 8 pieces of sourdough bread.
  2. Mix cream cheese with mayonnaise and place on four piece of sourdough bread.
  3. Stack a piece of cheddar, swiss, and havarti cheese on each piece of bread and then cover with remaining slices of bread.  Cover top and bottom of bread with mayonnaise and place each sandwich in a skillet.
  4. In a saucepan add tomato sauce, garlic, salt, pepper, and sugar.  Cook for 2 minutes and then add in heavy cream.  Bring to a boil, then reduce heat and let simmer 5 minutes.
  5. Pour soup mixture into a bowl, and two eggs, beaten.  Pour soup mixture over sandwiches and then place one slice of mozzarella cheese on each sandwich, then cover with 1/2 cup parmesan cheese.
  6. Bake for 25 minutes, serve hot and gooey.

Ingredients:

  • 8 slices sough dough  bread
  • 3 ounces cream cheese, softened
  • 3/4 cup mayonnaise, plus additional 1/4 cup
  • 4 slices of each: sharp cheddar, havarti, and swiss cheese
  • 4 slices mozzarella cheese
  • 1-1/2 cups tomato sauce
  • 1 teaspoon minced garlic
  • 1/4 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon sugar
  • 1/4 teaspoon dried basil
  • 1/2 cup heavy cream, or whole milk
  • 1 cup shredded parmesan cheese
  • 2 large eggs, beaten

Directions:

  1. Preheat oven to 350 degrees
  2. Mix cream cheese and 3/4 cups mayonnaise and spread on 4 pieces of bread.
  3. Layer one slice of Cheddar, havarti, and swiss cheese on top of the mayonnaise mixture and place the remaining four slices of bread on top of each slice.  Spread the additional mayonnaise on the outside of of all slices of bread.
  4. Place the four sandwiches in a large pan or skillet

For the Soup:

  1. Place tomato sauce, garlic, salt, pepper, and sugar in a saucepan over medium heat. Cook stirring for about 2 minutes and then add in heavy cream, bring to a boil then reduce heat and let simmer for 5 minutes.
  2. Pour tomato mixture into a large bowl and add eggs, whisk to combine and pour over sandwiches in skillet.  Place one piece of mozzarella cheese on top of each sandwich and then cover with shredded parmesan cheese.
  3. Bake uncovered for 25 minutes. Garnish with fresh parsley and serve warm.
  • The soup with thicken up and soak into the sandwiches.
