Starting at the 12:00 position we have our sweet red grapes then going clockwise we have our creamy avocados followed by the cooked and cooled quinoa.  To keep going we have the second of our sweet add ins of cranberries and then we reach the crunch of GARLIC flavored pumpkin seeds ( just say YUM).  Traveling on to the next ingredient we have our crumbled blue cheese that adds a little kick to the salad and then we have our second bit of crunch and creamy with our pecans and to top it off we have a sweet gala apple. How To Make Fall Harvest Salad with Homemade Vinaigrette

Rich and creamy and bursting with fall flavors, this salad is perfect for any girls get together.
Ingredients
  • 2 bags of spring mix greens (or any greens you prefer)
  • ¼ c. cooked quinoa (cooled)
  • 1 large gala apple cut into chunks
  • 1/4 cup pepitas ( I used garlic flavored)
  • 1/4 cup dried cranberries
  • 1/4 cup pecans (whole or chopped)
  • 1 rip avocado, diced
  • 1 cup red grapes, halved
  • For the Vinaigrette:
  • 1 tsp. minced green onions
  • 1 tsp. minced garlic
  • 2 tbsp. balsamic vinegar
  • 3 tbsp. extra-virgin olive oil
  • salt and pepper to taste
Instructions
  1. Add your mixed greens to a large bowl
  2. Add in all your salad ingredients and toss gently.
  3. To make the vinaigrette, add the green onion, garlic, and balsamic vinegar in a small mixing bowl and whisk to combine.
  4. Slowly add the olive oil by pouring in a constant stream, whisking until emulsified.
  5. Drizzle the salad with the dressing, toss to coat and serve immediately.
