The fast and easy way to shred carrots for salad is by using your cheese grater.  Peel your carrots first and then grate them.

The carrots will shred nice and thin and clean up is a snap.

How to make carrot salad

  1. In a small bowl whisk together yogurt, pineapple juice, brown sugar, and salt, set aside
  2.   • 4 cups peeled shredded carrots
  • ½ cup low fat plain yogurt
  • 1-20 oz can crushed pineapple reserve 1 T pineapple juice and discard the rest
  • 2 tbsp brown sugar
  • ¼ tsp salt
  • 1 cup raisins
  • 1 cup glazed pecans chopped
