Today was the day I fell in love with curry.  If you have never had curry before this Slow Cooker Beef Curry is the perfect recipe to try, and if you are a fan of curry you will love this recipe too.  From the bold flavors, tender pieces of meat and potatoes and the combination of a pickled cilantro puree, everything about this Beef Curry is phenomenal.

This Beef Curry recipe is very easy and the second best thing about this recipe besides the taste itself, it that is made in the slow cooker and requires very little work.  Using a slow cooker is just a great way to make a great and hearty meal for you and your family without spending all your time doing it.  This curry has a strong spicy flavor and pairs perfect with your favorite white rice and fresh Naan Bread to soak up all that goodness.  You will love every bite.

How Do you make Beef Curry?

  • Add 2 pounds beef stew meat into lightly sprayed 6qt slow cooker
  • Add in potatoes, curry powder, ground cumin, ginger, garlic, salt and pepper.  Mix all to combine.  Crumble a 1/2 a piece of Naan bread over the beef and then pour tomatoes over the top.
  • Cover and cook on low 5-7 hours.
  • Uncover and mix well.  In a food processor combine cilantro, pickled jalapeños and brine and cumin.  Pulse until combined, scraping down the side if necessary and season with salt and pepper.
  • Mix in 3 Tablespoons of cilantro puree into slow cooker, and add additional puree to top off each individual serving.  Serve hot over rice and with fresh Naan bread.

Tips for making Slow Cooker Beef Curry:

  • You do not have to add potatoes to your curry recipe, you can just add the beef and spices and omit the potatoes.
  • Make sure to check your Beef Curry around 5 hours ( very quickly) if you know your slow cooker runs hot, even when on low.  If you let it over cook your potatoes will fall apart and loose their shape.
  • Beef Curry is great served over rice, but you can also just serve it with the Naan bread too.  Naan bread is soft and is great for dipping in to the curry.
  • When making the cilantro puree make sure to pulse and scrape down the sides to fully incorporate all the ingredients so it can get pureed.
  • I also recommend lightly spraying your slow cooking with cooking spray so the beef does not stick to the bottom or the sides of the slow cooker and over cook.
  • You can keep this in the refrigerator for up to 3 days in an airtight container.

Slow Cooker Beef Curry

For a delicious curry dinner, this Slow Cooker Beef Curry with satisfy all your needs.

Ingredients:

  • 2 pounds beef stew meat
  • 1 pound red potatoes, quartered
  • 2 Tablespoons curry powder
  • 1-1/4 teaspoons ground cumin (divided)
  • 2 tablespoons ginger (divided)
  • 2 garlic cloves, minced
  • 2 15 ounce cans diced fire roasted tomatoes
  • 1-1/4 cups fresh cilantro
  • 1/4 cup sliced pickled jalapeno peppers, plus 1 tablespoon brine
  • salt and pepper
  • 6 slices of Naan bread
  • White rice for serving (optional)

Directions:

  1. Place beef and potatoes in a 6quart slow cooker and toss with curry powder, 1 teaspoon cumin, 1 tablespoon ginger, garlic, 1 teaspoon salt and 1 teaspoon pepper.  Crumble 1/2 slice of Naan bread over the beef in small pieces and pour the tomatoes right on top.
  2. Cover and cook on low 5-7 hours ( my slow cooker runs “hot” on low so it only took 5 hours).
  3. Once cooked, uncover and let the beef sit for 10 minutes and begin to make the cilantro puree.
  4. Serve hot over rice with naan bread and an additional spoonful of cilantro puree.

For the Cilantro Puree:

  1. To a food processor add: cilantro, pickles jalapenos and brine, 1/4 teaspoon cumin and 1 Tablespoon ginger.  Pulse until combined, scraping down the sides to combine all ingredients.
  2. Place 3 Tablespoons of cilantro puree into slow cooker and mix well to combine.
