Ingredients Overview
For the Brownie Base:
- 3/4 cup natural almond or peanut butter
- 2 tbsp melted coconut oil
- 2 tsp vanilla extract or paste
- 2 tbsp date syrup or maple syrup
- 1/2 cup oat flour
- 1/4 cup vanilla casein protein powder + 1 tbsp whey protein (sifted)
- 1/4 cup cocoa powder
- 1–2 tbsp almond milk, if needed
For the Caramel Layer:
- 1 cup pitted Medjool dates
- Hot water (for soaking)
Chocolate Topping:
- 3/4 cup dark chocolate chips (I like Lily’s)
- 1 tbsp coconut oil
How to Make Protein No-Bake Chocolate Date Brownies
- Soften the Dates
Remove pits from dates and soak in boiled water for 10 minutes. Drain and blend until smooth, adding a tiny bit of water if needed to help blend. - Make the Brownie Base
In a bowl, mix almond butter, melted coconut oil, vanilla extract, Fit Flour, protein powder, and cocoa powder. Stir until a thick dough forms. Press mixture into a parchment-lined baking tin.
- Layer the Caramel and Chocolate
Spread the blended date caramel over the brownie base. Melt the dark chocolate chips and pour over the top. Smooth with a spatula.
- Chill and Finish
Sprinkle with flaky salt. Freeze for 20–30 minutes until firm. Slice into small squares and enjoy!
