How to Make Gooey Protein Brownies
Soften the Dates
- Preheat oven to 350°F.
- In a large microwave-safe bowl, add dates and cover with water. Microwave for 2 minutes to soften.
- Reserve ½ cup date water, then blend dates and water until smooth.
Make the Batter
- Add avocado, egg, egg yolk, cocoa powder, protein powder, baking soda, and vanilla to the blended dates. Blend until combined.

Bake
- Fold in chocolate chips, then pour batter into an 8×8 parchment-lined pan.
- Bake for 18 minutes. Top with more chocolate chips while still hot (optional).
- Let cool slightly before slicing. Store leftovers in an airtight glass container.

Absolutely! For a vegan version, use flax eggs and a plant-based protein powder. Additionally, if you’re avoiding nuts, stick with the avocado base—there’s no nut butter needed in this recipe.
