Who new dinner could be so sexy?  Ok, maybe not sexy, but definitely sensational.  This Garlic Butter Surf and Turf is so tasty, so extraordinary you will wonder why you haven’t made it before.

Butter seared shrimp and scallops with a nice New York Strip Steak topped with a herb garlic butter compound is something you would order off a menu.  This Surf and Turf really is an amazing meal and will make date night an ongoing tradition.

I admit date night is a bit of a struggle at our house with a wild 16 month old little girl, who is like having 5 kids in one, but i managed to surprise my husband with this Garlic Butter Surf and Turf and his eyes lit up for joy.  I am not sure it was a “planned'” date night, but it turned out to be delicious and a great evening.  So surprise your husband or wife with this sexy surf and turf and turn an ordinary night into an extraordinary night.

What is the “turf” in surf and turf?

  • Surf and Turf is a main course meal that has been around for a long time.  It combines red meat with seafood.  The seafood generally used in Surf and Turf are shrimp, prawns, lobster, scallops, clams etc.  All of which can be fried, grilled, steamed, or breaded.

Tips for making the perfect Garlic Butter Surf and Turf Skillet:

  • Make sure to use fresh or frozen shrimp and scallops that have not already been pre-cooked.  You don’t have to use the shrimp with the tails on, but just make sure they are not pre-cooked.
  • Once you have decided on what type of steak you want to use, we like New Your Strip Steaks, put them out on the counter for about 20-30 so they get to room temperature.  This helps the steaks cook evenly from edge to center.
  • Make your butter compound ahead of time so it has a chance to firm up and once placed on the hot steaks it will melt and infuse into the meat.
  • Cook the scallops and the shrimp separately because the scallops will be cooked at a higher temperature to sear them on the outside.
  • I recommend cooking your asparagus first in the skillet and then setting it aside so it gets cooked at a lower temperature than the seafood.

How to make compound butter:

  • Mix one cube of soften unsalted butter with, 4 teaspoons of minced garlic, 1 teaspoon lemon juice, and 2 Tablespoons of fresh minced thyme.  Combine until all ingredients are incorporated and place the mixture on a sheet of wax or parchment paper.  Roll into a log, twist the ends of the paper and place in the refrigerator until firm.

Garlic Butter Surf and Turf Skillet


  • 2-8oz New York Strip Steaks- take out 20-30 minutes to rest at room temperature
  • 1lb fresh/frozen-thawed shrimp
  • 1lb fresh/frozen scallops
  • 1-bunch of asparagus, ends trimmed
  • 6-Tablespoons butter, divided
  • Fresh minced thyme
  • juice of one lemon
  • old bay seafood seasoning
  • salt pepper

For the Compound Butter:

  • 1-cube unsalted butter, softened
  • 4-garlic cloves, minced
  • 2-Tablespoons thyme, minced
  • 1-teaspoon lemon juice
  • wax/parchment paper


  1. Make the compound butter: mix all ingredients in a bowl, stir to combine well and place on wax/parchment paper.  Roll into a log and twist the ends to seal.  Place in refrigerator to firm.
  2. Season steaks with salt and pepper and grill on BBQ 5-7 minutes per side to desired doneness.  Remove from grill and cover with foil.
  3. Place 2 Tablespoons of butter in skillet on medium heat, and asparagus, season with salt and pepper and saute for 4-5 minutes, just until they begin to wilt.  Remove from skillet and set aside.
  4. Add 2 Tablespoons of butter to same skillet and turn up to medium high heat.  Add scallops and season with Old Bay Seasoning.  Sear on each side for 2 minutes, until nice and golden brown around the edges.  Turn down the heat and continue to cook 2-3 more minutes.  Remove from skillet and set aside with asparagus.
  5. Add last 2 Tablespoons of butter to same skillet and add the shrimp.  Season with Old Bay Seasoning and cook about 2-3 minutes per side.  Remove skillet from heat.
  6. Add the steaks, asparagus and scallops back in.
  7. Place a moderate slice of the butter compound on top of the steaks and serve.
