Well I am sure there are a few of you out there thinking to yourself “me!” Which is totally understood, but I promise you this chicken casserole will change your mind. Not only the simplicity of it, but the down right delicious creamy flavor will get you every time.

It is kind of funny because when I think of a casserole I often revert back to family get together’s where one of my Aunt’s would bring a casserole and we could never tell what was in it, but it always tasted amazing. Well I don’t think casseroles have changed much, they still are kind of a mystery, but if you take a chance on them they will definitely surprise you in a good way.
This Creamy Parmesan Chicken Ritz Casserole is so easy to make and is done in 30 minutes. Your family will love it and the beauty of a casserole is they are always filling and only need a small side to go along with it. In this recipe it would be great served with some warm sourdough bread to scoop up all the creamy goodness so nothing is left behind.
Tips for making the best Creamy Parmesan Chicken Ritz Casserole:
- I used rotisserie chicken, but you don’t have too. You can cook or boil chicken breast and shred it for the casserole. I like using rotisserie chicken because it is already cooked and seasoned.
- Try not to over smash your ritz crackers. You don’t want to turn them into a bread crumb or powder consistency. Keep some chunky pieces to add to the texture.
- To add to the creaminess, use grated parmesan cheese. It adds such a great rich flavor.
- If you want to make the ritz topping have a little crunch to it, place the casserole under the broiler for 1-2 minutes once it is done baking. Make sure to watch it so it doesn’t burn, but it will give it a nice buttery crust as you bite into it.
- If you want to add more vegetables or make it vegetarian, add mushrooms, peppers, cream of mushroom or celery soup, in place of cream of chicken.

Creamy Parmesan Chicken Ritz Casserole
Ingredients:
- 3 cups otisserie chicken
- 1 cup sour cream
- 1-10.75oz can cream of chicken soup
- 3/4 cup diced onions
- 1/2 cup grated parmesan cheese
- 2 sleeves ritz crackers, crushed
- 1/2 cup (1 cube) melted unsalted butter
- 1 teaspoon garlic salt
- Pepper to taste
- Parsley to garnish
- Honey roasted pecans, chopped for garnish (optional)
Directions:
- Preheat oven to 350 degrees.
- In a large bowl combine chicken, sour cream, cream of chicken soup, parmesan cheese, garlic salt and pepper.
- Place chicken mixture into a lightly greased 2.5-3 quart casserole dish.
- Top with crushed ritz crackers and pour melted butter over the top.
- Bake uncovered for 25-30 minutes. Garnish with parsley and honey roasted pecans.
- Serve hot with warm sough dough bread.
