Teriyaki flavor is a must in my life, and these chicken bowls are so amazing, but you may also like the Teriyaki Chicken Kabobs, Teriyaki Steak Meal Prep, or the Teriyaki Salmon Skillet, with homemade teriyaki sauce. Each recipe is different but still has that great teriyaki taste.

I have to admit, I am slightly obsessed with teriyaki flavors. I even made a Teriyaki Meatball Stir Fry which may sound a little unconventional in terms of meatballs and stir fry, but it is delicious, you have to try it! But can I just talk about the elephant in the recipe for a minute, the black rice or sometimes referred to as “forbidden rice.” Have you ever had it or heard of it? I was truly ecstatic about finding this little gem and how much flavor it adds to a meal. Black rice is amazing I have to say, and it really does have flavor all on its own, unlike traditional white rice that can taste pretty bland. These Teriyaki Chicken Bowls with Black Rice are a healthy option for lunch and dinner that actually taste good and will fill you up and not leave you feeling deprived. Black rice can transform any bowl into something really amazing and is simple to cook too.
What is black or forbidden rice?
Black rice or also called forbidden rice is a whole grain that is loaded with fiber and antioxidants similar to those found in blueberries or blackberries. Black rice is highly nutritious and it cooks in about half the time of brown rice.

How do you make teriyaki chicken?
Making teriyaki chicken is very simple and is a great way to add delicious flavor as well. You can make your own teriyaki sauce or you can use your favorite store bought sauce. I like to use Mr. Yoshida’s Teriyaki. Either way your Teriyaki Chicken Bowl with Black Rice is going to come out sensational. To make your own teriyaki sauce follow this recipe by adding the following to a medium sauce pan:
- 1/2 cup lite soy sauce
- 1/2 cup water
- 1 Tablespoon grated ginger
- 1/2 cup apple cider vinegar
- 1 Tablespoon minced garlic
- 2 Tablespoons honey
- 5 Tablespoons brown sugar
- 2 Tablespoons cornstarch + 1/4 cup of water
Mix all ingredients over medium heat and let cook until lightly bubbles. Reduce heat and simmer until ready to use. Then, either marinate the chicken for 30 minutes or baste the chicken on the grill as you cook it. Your chicken will come out tender, juicy, and delicious.
How do you make Teriyaki Chicken Bowls?
- Make black rice according to package directions and set aside.
- Preheat grill to 450 degrees and spray with nonstick grilling spray, add chicken breast season with garlic salt and pepper and baste with teriyaki sauce. (you can also marinate the chicken before grilling).
- Close lid and cook for 8 minutes, flip and baste again and cook an additional 8 minutes until juices run clear. Remove from grill and set aside.
- In a skillet over medium heat add olive oil and vegetables. Add in 2 tablespoons of teriyaki sauce and sauté for 2-3 minutes, just until the vegetables have begun to soften.
- Place rice in a bowl and lay the chicken and vegetables on top. Garnish with a little more teriyaki sauce and enjoy.

Ingredients:
- 4 boneless, skinless chicken breasts, lightly tenderized
- 4 cups cooked black rice
- 2 cups brussels sprouts, halved
- 1 cup matchstick carrots
- 1 cup shelled edamame
- 2 avocados, sliced thin
- 1 tsp garlic salt
- 1 tsp pepper
- 1 cup teriyaki sauce, divided or homemade teriyaki sauce
- sesame seed to garnish (optional)
Directions:
- Preheat grill to 450 degrees and spray with nonstick grilling spray.
- Cook rice according to package directions and set aside.
- Slightly tenderize chicken breast to thin out and season with garlic salt and pepper. Place chicken on grill and with 3/4 of the teriyaki sauce baste chicken while it is cooking. Cook for 8 minutes. Flip chicken and baste again, cook an additional 8 minutes, remove from grill, cover and set aside.
- In a skillet over medium heat sauté your vegetables using the rest of the teriyaki sauce for 2-3 minutes stirring often.
- Assemble the bowls: place 1 cup of black rice and one chicken breast to each bowl. Divide the sautéed vegetables and avocados among the 4 bowls and season with sesame seeds and more teriyaki sauce and serve.
