- 1 pound bag frozen tater tots
- 1 cup Bisquick
- 4 eggs
- 2 cups whole milk
- 1 cup diced red onion
- 3 cups colby jack cheese, divided
- 6 pieces cooked bacon, chopped and divided
- 1 teaspoon pepper
- 1/2 teaspoon salt
- 1 avocado, diced
- 1 red pepper, diced
- 2 Tablespoons chopped chives
Directions:
- Preheat oven to 400 degrees and spray a 9×13 baking dish with nonstick cooking spray.
- In a large bowl mix together, Bisquick, eggs, milk, 1 cup cheese, onions, 5 pieces of bacon, salt and pepper and pour into baking dish. Place in oven and bake for 35-40 minutes, remove from oven and set aside.
- Pour frozen tater tots on a rimmed baking sheet and bake for 20 minutes. Pour cooked tater tots over the top of the baked casserole and top with remaining 2 cup of cheese.
- Cook for 10 more minutes until cheese has melted.
