Simple Lobster Fried Rice

When life gets busy, and let’s face it, I think “busy” can be an understatement for some people, more like crazy!  We still need to feed our bodies and minds with good stuff.  So today’s “good stuff” is this very easy and very delicious Lobster Fried Rice.  I have always been a bit intimidated of making fried rice, but now I can say it really is a simple dish to make that taste sensational.

I am always looking for versatile recipe that can be made more than one way or easy to modify if food restrictions, likes, or dislikes come into play.  I eat a lot of chicken at my house so that is the reason for adding lobster to this fried rice, but like I said versatility is my game, so if you would rather do chicken, beef, pork, tofu, or vegetarian the only thing you have to change is the meat.  Everything else can stay the same with the same amazing flavor.

Which rice is good for fried rice?

  • It really is person preference, but there are a few types of rice you can use.
  • Long or medium grain rice, such as jasmine or basmati rice gives you a more fluffy rice that really doesn’t stick together.
  • Short grain rice, like a sushi rice is softer and stickier causing the rice to stick together more.

One thing I love about this recipe is using frozen vegetables.  It makes cooking so much faster not having to chop everything up, it is already done for you.  Just thaw out the vegetables and throw them in, it’s as simple as that.  A good thing to do is just put the frozen vegetables in the refrigerator the night before you are going to make the fired rice so that way they are ready to open and use when you are.

Are frozen vegetables good for you?

  • Yes!  As a matter of fact studies have shown that frozen vegetables have just as many nutrients in them as fresh vegetables, and possibly more.
  • Frozen vegetables are a good and healthy way to keep your vegetable intake up, especially when a certain vegetable you need is out of season or not available.

How do I make fried rice at home?

  1. Heat a skillet or wok over medium high heat and add sesame oil.
  2. Stir in eggs and cook until scrambled.  Add garlic, ginger, peas and carrots, corn, onions, and leeks to eggs and cook until vegetables are soft.
  3. Add cooked white rice, and spread evenly over vegetable mixture.  Cook without stirring for one minute or until rice just begins to toast.
  4. Stir in soy sauce, fish sauce, and lobster.  Mix to combine well and cook for an additional 2-3 minutes until heated through.  Garnish with green onions, flat leaf parsley, and red pepper flakes.

Simple Lobster Fried Rice

Simple Lobster Fried Rice has an amazing robust flavor and is quick and easy to make.  The lobster is the star of the show, but it gets a lot of help from all the flavors working with it in every bite.

 

Ingredients:

  • 3 Tablespoon sesame oil
  • 4 eggs, beaten
  • 2 Tablespoons minced ginger
  • 2 Tablespoons minced garlic
  • 4 cups cooked white or brown rice
  • 2-6.5oz cans lobster meat
  • 1/2 cup thinly sliced leeks
  • 1/2 cup frozen corn, thawed
  • 1/2 cup onions chopped
  • 1-12oz bag frozen peas and carrots, thawed
  • green onions, flat leaf parsley, and red pepper flakes to garnish (optional)

Directions:

  1. Heat oil in a large skillet or wok over medium high heat.  Add eggs and cook, stirring until scrambled.
  2. Add ginger, garlic, peas and carrots, corn, onions and leeks.  Cook stirring often until vegetables are tender about 2 minutes.
  3. Stir in cooked rice and spread evenly over vegetable mixture.  Do not stir for 1 minutes or until rice begins to toast.  Pour in soy sauce, fish sauce, and lobster.  Stir to combined well and heat for another 2-3 minutes until heated through.  Garnish with green onions, parsley, and red pepper flakes, serve warm.

*To make the recipe even faster use microwavable rice instead of cooking your own.
