I can’t say I am a huge baker, but this banana bread recipe right here is amazing and worth ever second it took to make.  Having said that, I do love to bake I just don’t do it as often I would like, but having my mom in town got me excited to make one of her favorite desserts or in her case I should say breakfasts!  This truly is The Best Banana Bread Recipe and I know you will love it too. 

I always go to the store and buy bananas, one because I love to mix them in my protein drinks, but I always have so many aspirations to bake all kinds of things with them, but then it never happens.  So one of the perfect things about banana bread is that we actually get to use those brown, soft, squishy bananas we would otherwise toss before the fruit flies start to congregate.  Not too many desserts call for “brown” fruit.

Ingredients:

  • 4 ripe bananas, mashed
  • 3 tbsp light brown sugar
  • 2 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1 cup sugar
  • 1/2 cup butter, softened
  • 2 eggs
  • 2 cups flour
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 2 tbsp plain yogurt

For the Crumble topping:

  • 1 cup flour
  • 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 6 tbsp butter, melted
  • 1/2 cup light brown sugar

For the glaze:

  • 1 cup powdered sugar
  • 1 tsp vanilla
  • 2 tbsp milk

Directions:

  1. Preheat oven to 350 degrees, and flour your bread pan.
  2. In a small bowl mash bananas and add light brown sugar, vanilla extract, cinnamon, and nutmeg, mix to combine, set aside.
  3. In a separate large bowl cream sugar and butter.  Add in eggs and mix until blended.  Then add in flour, baking soda, and salt.  Fold ingredients in until blended and then add in the yogurt and mix again.
  4. Add in the mashed banana mixture and gently mix to combine.
  5. Pour into a bread pan.
  6. For the crumble topping: mix together all ingredients until it resembles medium sized crumbs.  Spread evenly over batter.
  7. Cook for 1 hour and let cool before removing from pan.  Flip the pan over and give it a little shake to get the bread to come out.
  8. Combine all the ingredients for the glaze and place it into a sealable plastic bag and cut the tip off.  Pipe over banana bread, slice and serve.

Serving = 1 slice, approximately 6 slices per loaf.
