Grilled Caprese Chicken
Grilled Caprese Chicken is a great lunch or dinner recipe loaded with cheese, avocado, tomato, and fresh basil served over a warm grilled ciabatta baguette and topped with a balsamic glaze.
I’m am not going to lie, we eat a lot of chicken around my house, some of my favorite chicken dishes are Sweet and Sour Chicken, Bacon Wrapped Chicken with Jalapeno Cream Sauce, and Oven Baked BBQ Chicken, but now I am adding this Grilled Caprese Chicken to that list and you will know why once you taste it.

The grill is one of those cooking tools that just makes everything taste so good. It’s like you can really get to the soul of the flavor of whatever you are cooking on a grill. And grilling doesn’t’ stop and start with meat, that is just the tip of the iceberg.
For this Grilled Caprese Chicken rather than serving it on it’s own I decided to add it to a warm grilled ciabatta baguette and top it with a balsamic glaze. The flavor of the gilled ciabatta bread and chicken with warm melted mozzarella cheese was truly sensational. Then you top it off with fresh tomatoes, sliced avocado and basil and you have a little piece of grilling heaven.
What does Caprese mean?
- In culinary terms, Caprese refers to a salad made from fresh tomatoes, mozzarella, and basil. Topped with olive oil and seasoned with salt and pepper.
What is Grilled Chicken Caprese?
- Grilled Chicken Caprese is slightly different than your traditional caprese salad or chicken made in the oven. It is grilled giving it an amazing flavor and then topped with the deliciousness of melted mozzarella cheese, diced fresh tomatoes, thin sliced avocados and fresh basil.
- The Chicken is then topped with a balsamic glaze and placed on a grilled piece of ciabatta bread. Perfect for lunch or dinner.
This Grilled Caprese Chicken can also be served over pasta or eaten by itself if you are looking for a lighter lunch option. It would go great with an Easy Avocado Tomato Cucumber Salad, Grilled Corn on The Cob, or a Strawberry Avocado Spring Salad. All options that can be used for lunch or dinner.
Is Chicken Caprese healthy?
- Chicken Caprese is made up of boneless, skinless chicken breast which are very lean and have about 25 grams of protein.
- If you take the ciabatta baguette out of the recipe it will be a lighter carb load and reduction in calories.
- The mozzarella cheese topped with tomatoes, avocados, and basil won’t tip the scales either and will provide healthy fats our bodies need.
How do you make Grilled Caprese Chicken?
- Preheat grill to 400 degrees and spray with nonstick grilling spray.
- Using thin sliced chicken breast, season with garlic salt and pepper.
- Grill chicken until no longer pink about 5 minutes each side. The last minute add thin sliced mozzarella cheese and continue to grill until cheese has melted about 1 minutes. Remove from heat and set aside.
- Slice your ciabatta bread in half then cut lengthwise to get 4 pieces of bread. Coat lightly with olive oil and season with Italian seasoning. Grill for 3-4 minutes until toasted.
- Add the chicken to the grilled bread and top with diced tomatoes, thin sliced avocado, and chopped basil leaves. Garnish with balsamic glaze, and a little salt and pepper. Serve warm.
Do you have to use an outdoor grill?
No. If you have a grilling pan and would prefer to use that you can. You can also make it in a traditional skillet as well if you do not have a grilling pan. Simply follow the same steps, but you can toast your bread in the oven to get a nice even texture to it.

Ingredients:
- 4 thin sliced chicken breast
- 1 ciabatta baguette, cut in half and then lengthwise for 4 separate pieces
- 4 tbsp olive oil
- Garlic salt
- Pepper
- Italian seasoning
- 1 package mozzarella cheese slices
- 3 roma tomatoes, diced
- 2 avocados, thinly sliced
- .66oz fresh basil, chopped
- 1 8.5oz container balsamic glaze
Directions:
- Preheat grill to 400 degrees and spray with nonstick grilling spray.
- Season chicken breast with garlic salt and pepper.
- Place chicken on grill and cook for 5 minutes each side, until no longer pink. The last minute add sliced mozzarella cheese and continue to grill until cheese has melted about 1 minutes. Remove from heat and set aside.
- Lightly coat bread halves with olive oil and season with Italian seasoning. Grill for 3-4 minutes until toasted.
- Add the chicken to the grilled bread. Top with diced tomatoes, avocado slices, and fresh basil. Garnish with balsamic glaze, salt and pepper. Serve warm.
