Chicken Fajita Burrito Bowls
Chicken Fajita Burrito Bowls are a great way to shake things up a bit from the traditional fajitas. There is something to say for eating fajitas in a bowl, everything is all in place and you can just mix it all together and eat away. Maybe its the simplicity of having all the seasoned chicken, peppers, and onion mixed in with the beans, guacamole, sour cream and cheese that makes it kind of fun to eat.
Not to mention it makes a delicious and hearty dip if you want to mix it all together and serve it with some warmed tortilla chips. Often times we get stuck in a rut with how we fix our meals and just by changing up the traditional it makes it feel like a brand new exciting recipe. I love using quinoa as my base to the bowl, but rice or even chopped hearts of romaine would be good too.
Chicken Fajita Burrito Bowls are a good way meal prep. You can omit the guacamole and sour cream and add it in as you take one of the bowls out to eat, or leave it off all together. Either way it is a simple and easy way to meal prep for a quick, and delicious meal. Burrito bowls are great for lunch or dinner and by using pre-cooked chicken it really saves on time too. So don’t get stuck in a rut, switch things up and dive into a Chicken Fajita Burrito Bowl.
How do you make a Burrito Bowl?
- Cook your quinoa and place it in a bowl as your base.
- Cook your chicken breast and season with fajita seasoning, or use pre-cooked chicken, warm in skillet and season with fajita seasoning, and place in bowl on top of quinoa.
- Saute peppers and onion, season with fajita seasoning and place in bowl with chicken and quinoa.
- Add black beans, guacamole, sour cream, pico de gallo, cilantro, and cheese to bowl.
- Serve with tortilla chips and garnish with siracha sauce.
What is a Burrito Bowl?
- Is served in a bowl with your choice of meat; chicken, beef, pork, or vegetarian. Add to the bowl is your choice of rice, beans, sour cream, salsa or pico de gallo, guacamole and cheese.
- You can add any fixing that you like to the bowl.
Are Burrito Bowls healthy?
- Burrito Bowls can be made on the healthier side. If you choose fajita chicken or vegetarian and leave out the guacamole, sour cream and beans, it will be a lighter and healthier version of a burrito bowl.

Chicken Fajita Burrito Bowls

Ingredients:
- 1-10 oz bag frozen (microwavable) quinoa, cooked.
- 5-frozen pre-cooked chicken skewers, thawed or 2 chicken breast cooked and diced
- 1/2-cup black beans, rinsed and drained
- 2-avocados, mashed
- 1/3-cup sour cream
- 1/2-cup shredded colby jack cheese, or cheese of choice
- 1 red pepper, 1 orange pepper sliced, seeds and membrane discarded
- 1/2-onion, sliced
- 1-jalapeno, seeded and sliced
- 1/3-cup pico de gallo
- 1/4-cup roughly chopped cilantro
- 3-tablespoons fajita seasoning
- 1-teaspoon garlic salt
- 1-Tablespoon olive oil
- Siracha sauce for topping (optional)
Directions:
- Add olive oil to a large skillet and saute peppers and onion over medium heat until tender, stir in 1 Tablespoon of fajita seasoning and mix until combined, set aside.
- In same skillet add chicken and cook until heated through. If using chicken breast season with remaining fajita seasoning and cook over medium-high heat about 5 minutes a side until no longer pink in the middle.
- Mash avocados with fork and season with garlic salt.
- Place cooked quinoa in a large bowl and add the chicken, sauted peppers/onion mixture, black beans, guacamole, sour cream, cheese, pico de gallo, and cilantro. Top with siracha and serve with tortilla chips or flour tortillas.
