We all hate that famous question, “what are we having for dinner? or “what’s for dinner tonight?” Well all too often I have found myself asking the same thing. So tonight I have your answer with this Garlic Butter Shrimp Scampi Skillet. It is simple to throw together, tastes rich and creamy and will be perfect when in a crunch for time. Traditionally shrimp scampi is served over pasta, but in this case it is made with rice leaving out just another step in your food prep time and time spent in the kitchen.
What is in shrimp scampi sauce?
- Scampi itself is considered a shrimp dish served in garlic butter, cheese, and white wine served over pasta or rice.
- Scampi can also be served just as the shrimp by itself.
Shrimp Scampi
If you are a lover of shrimp, you are going to love every bite of this shrimp scampi. It has so much rich and creamy flavor and isn’t too heavy, leaving room for a lite dessert! I did leave the tails on the shrimp while making this scampi recipe, but you can take them off making it a bit easier for your family to eat. I also love using the cream of mushroom soup to keep the recipe a bit lighter and it adds such an amazing creaminess you will love. The red pepper gives a nice tender crunch to the recipe breaking up the textures and making every bite amazing.
How do you make Shrimp Scampi?
- Preheat oven to 325 degrees.
- Cook rice according to package directions.
- In a large skillet melt butter on medium high heat. Add red pepper, onion, and garlic. Cook until tender.
- Add in the rice, mushroom soup, lemon juice, and shrimp. Mix in 1/2 cup parmesan cheese and combine.
- Top with more parmesan cheese and bake for 30 minutes.
- Garnish with parsley, lemon, and green onions.
If you would like to use prawns instead of shrimp that is up to you, both will taste delicious.
What is the difference between a prawn and a shrimp?
- The only real difference between a prawn and a shrimp comes in the anatomy of their claws. A prawn has claws on three out of the five pairs of legs they have, and shrimp have claws on two of the five pairs of legs they have.
- Their body shapes are different, but when it comes to cooking them they are practically the same and can be substituted for each other with the nearly the same taste.

Ingredients:
- 1-8oz package Garlic Butter Flavor Uncle Ben’s Ready Rice, cooked according to package directions
- 1/4-cup butter
- 1-red pepper sliced and seeded
- 3/4-cup diced onion
- 1-Tablespoon minced garlic
- 1-teaspoon cracked pepper
- 1-1/2 pounds medium shrimp, peeled and deveined
- 1-26oz can cream of mushroom soup
- 2-Tablespoons lemon juice
- 1-cup fresh grated parmesan cheese, divided
- 1 lemon, sliced for garnishing
- Fresh Italian parsley and green onions for garnishing (optional)
Directions:
- Preheat oven to 325 degrees.
- In a large skillet over medium high heat melt butter. Add red pepper, onion, and garlic. Cook until tender.
- Add in the rice, mushroom soup, lemon juice, shrimp, and 1/2 cup parmesan cheese. Mix well to combine.
- Top with remaining 1/2 cup parmesan cheese and bake for 30 minutes.
- Let stand 5 minutes before serving and garnish with lemon, parsley and green onion.
