Sometimes when you think about making soup it seems like an all day project in the kitchen, but this soup is done quickly and ready to eat as soon as you are.  I love adding more cheese on top of cheese in soup because it gives it a creamier texture and who doesn’t love more cheese?  One thing I like to do is add some seasoned croutons to my soups just before serving it.

Do You have to cook the tortellini before using it?

  • I like to use frozen tortellini and just throw it into the soup and let it simmer, it will cook fast.  You can also use refrigerated tortellini which will also cook quickly since the soup will be hot when you add them to it.

Do you have to use chicken sausage?

  • No.  You can use any type of sausage you like.  I like to add chicken sausage, but you can add beef, pork, or turkey sausage too.
  • You could also add ground sausage if you don’t like the sausage links.

Soup is a great way to feed a lot of people and when it acts as the meal that is even better.  Tuscan Parmesan Tortellini Soup would be amazing served with a side of warm garlic bread for dipping in the soup and soaking up the delicious flavors.  Never be afraid to serve soup as your meal, rather than along side something else.

How do you make Tortellini Soup?

  • In a large pot heat oil over medium high heat.
  • Add onion and cook until tender.  Add in sliced sausage and cook until golden brown, about 5 minutes.
  • Stir in: red pepper flakes, garlic, chicken stock, tomato paste, and diced tomatoes.
  • Bring to a boil, then add in frozen cheese tortellini.  Simmer 15 minutes and stir in spinach, navy beans, fresh basil, and grated parmesan cheese.
  • Continue to simmer until spinach has wilted.
  • Serve, and garnish with shredded parmesan and croutons.

What is the difference between chicken stock and chicken broth?

  • Chicken stock tends to have more flavor and is made more from the bony parts.  Whereas, chicken broth is made more from the meat.  Both work great in soup, I like to use chicken stock then I don’t have to add as much salt to season it.

Tuscan Parmesan Tortellini Soup

Ingredients:

  • 1 medium onion, chopped
  • 1 Tablespoon Safflower oil
  • 2-13oz packages chicken sausage, sliced
  • 6 Tablespoons minced garlic
  • 1-14.5oz can diced tomatoes seasoned with basil, oregano, and garlic
  • 3 cups chicken stock
  • 2 Tablespoons tomato paste
  • 1 teaspoon red pepper flakes
  • 1-16oz package frozen cheese tortellini
  • 5oz baby spinach
  • 1-14.5oz can navy beans, drained
  • 1 teaspoon fresh chopped basil
  • 1/4 cup grated parmesan cheese
  • shredded parmesan for garnishing
  • croutons for garnishing (optional)

Directions:

  1. In a large pot over medium high heat, cook onions until tender.  About 5 minutes.
  2. Add chicken sausage and cook another 5 minutes, until it starts to brown and add in garlic, diced tomatoes, Chicken stock, red pepper flakes, and tomato paste.
  3. Bring to a boil and add in tortellini.  Reduce heat and simmer about 15 minutes.  Add in spinach, navy beans, basil and parmesan cheese.  Stir and continue to cook until spinach has wilted.
  4. Sprinkle the top with more grated parmesan and croutons and serve.
