Shrimp Cobb Salad

Ingredients:

  • 1-12oz bag frozen cooked shrimp, thawed (tails off)
  • 4 hard boiled eggs, quartered
  • 1/2 red onion, thinly sliced
  • 5 pieces cooked bacon (1 piece reserved for dressing along with bacon drippings)
  • 1 cup blue cheese crumbles
  • 1 avocado, sliced
  • 1 cup cherry tomatoes, halved
  • 3 cups romaine lettuce, roughly chopped

For the Dressing:

  • 1 piece of cooked bacon
  • Reserved bacon drippings
  • 1 glove garlic
  • 1/2 teaspoon garlic salt
  • 1/2 teaspoon sugar
  • 3 Tablespoons avocado oil
  • 2 Tablespoons balsamic vinegar

Directions:

  1. Cook bacon in a large skillet until crisp and set aside.  Reserve one piece for dressing and bacon drippings.
  2. Place chopped lettuce on a large platter or bowl and layer all the ingredients on top.
