Ingredients

  • 1 LB butter + 1 tbsp for topping
  • 1 cup sugar + ½ cup for topping
  • 3-1/4 cups flour
  • 1 tsp vanilla
  • ½ cup glazed pecans finely chopped
  • 1-1/2 cups crushed potato chip
  • Powdered sugar to sprinkle on top optional

Instructions

  • Preheat oven to 300 degrees.
  • Cream butter and sugar in a stand mixer or using a hand mixer. Slowly blend in the flour, pecans, and vanilla.
  • Gently mix in the crushed potato chips.
  • Using a spoon or a cookie scoop, drop onto an un-greased cookie sheet. Dip the bottom of a class in melted butter and then sugar and flatten cookies lightly. Bake for 18 minutes, then remove from oven and dust with powdered sugar.
