Peppermint Patty Stuffed Brownies

Give me a “B,” give me an “R,” give me an “O,” give me a W-N-I-E-S, what’s that spell? Brownies!  Ok maybe a little overkill, but I am not kidding anyone when I say these brownies are sensational.  I think we all get our fair share of brownies throughout our lifetime, they are delicious, easy to make, last a little longer than some baked desserts and for some reason when you have brownies life just gets sweeter.

However!  These Peppermint Patty Stuffed Brownies had me at first bite. They are fudgy and with the milk chocolate outside and warm peppermint inside of the York candy it just melts in your mouth.  Its almost like eating a thin mint Girl Scout cookie on steroids, and these brownies are made from a simple box brownie recipe.

How do you make box brownies moist?

  • Depending on what type of brownies you make the key is adding one less egg to make the brownies fudgy and moist.

Brownies are made in so many different ways, that is another reason I love to make them.  You can add all kinds of fun treats inside or on top and they taste amazing.  I wanted to add a little something more to these Peppermint Patty Stuffed Brownies so I frosted them with a whipped white frosting and then topped them off with warm chocolate sauce and vanilla bean ice cream.

What sauce goes with brownies?

  • There are many options when topping your brownies with sauce
  • You can add: chocolate sauce or chocolate fudge
  • Carmel sauce
  • Fruit sauces, such as strawberry, blueberry, or raspberry
  • Butterscotch
  • chocolate gravy
  • Chocolate shell, that hardens after you put it on

How do you make icing?

  • A quick and easy way I have learned to make great icing for brownies is simply by using a a pre-made icing and then adding about 1/4 cup of powdered sugar to it.
  • The powdered sugar makes the icing a bit stiffer so it won’t melt and will last longer on your brownies, and it makes storing the brownies, layering them between parchment paper easier because the stiffer icing won’t stick to the paper.

Don’t be afraid to indulge and stack a few Peppermint Patty Stuffed Brownies on top of each other and douse them with your favorite sauce.  You can use whatever sauce you and your family loves or just eat them as they are.  No matter how you decide to eat and serve these brownies they are going to be cheer worthy.

Tips for making the best Peppermint Patty Stuffed Brownies:

  1. When using any pan, line it with parchment paper that hangs over the sides of the pan to make removing the brownies to cool, frost, and cut so much easier.
  2. Let the brownies rest in the pan for about 15 minutes and then pull them out using the parchment paper to fully cool.
  3. If you are going to frost the brownies make sure you have given them enough time to cool.
  4. I always add powdered sugar to my frosting/icing to make it a bit stiffer so it doesn’t melt or loose its shape.
  5. For garnishing with chocolate shavings use a couple extra peppermint patties and a fine cheese grater (optional).

Peppermint Patty Stuffed Brownies

Peppermint Patty Stuffed Brownies are not just a gooey chocolate fudge combination, they are overflowing with York peppermint patty’s in every bite that you don’t want to miss.

 

Ingredients:

  • 1 box brownie mix ( I used Duncan Hines) made according to package directions, fudgy version.
  • 1-19.75oz bag York Peppermint Patty miniatures
  • 1-16oz can whipped white frosting
  • 1/4-cup powdered sugar
  • Chocolate sauce and ice cream to serve (optional)

Directions:

  1. Pre-heat oven to 325 degrees
  2. In a 9x13in baking pan place a large piece of parchment paper to extend over the sides.
  3. Pour brownie mix into a measuring bowl and pour half the batter into the baking pan.
  4. Top with 24 peppermint patties, and pour remaining batter over the top and spread to cover.
  5. Bake for 23 minutes.  Let brownies cool 15 minutes in pan.  Grabbing the parchment paper remove brownies from pan to cool completely.
  6. Meanwhile: mix the frosting with powdered sugar.  Once brownies have cooled frost and garnish with chocolate shavings, chocolate sauce, and ice cream (optional).
